Ingredients

  1. 1 lime
  2. 1 tablespoon superfine sugar
  3. 2 ounces Cachaça*
  4. Crushed ice

Instructions

  1. *Cachaça is a Brazilian brandy made from sugar cane.
  2. Cut up a lime into 8 wedges. Muddle the wedges in a rocks glass with sugar. Add Cachaça and top with ice. Stir and serve.

Fogo de Chao is my go to place for caipirinha. The bartender there pointed out to me that it is important to cut the lime so that you have removed the line of pith inside that runs from pole to pole in the fruit. He says that is bitter and detracts from the drink. They muddle the limes and cut them smaller than a 1/8th wedge size. Better muddling like ejw921 says

cachaca is made from distilled sugarcane juice.. so if anything it’d be akin to rum… certainly not brandy.. no grapes involved

Good recipe, but I think it can be more boozy. I like the review below where someone mentioned muddling the lime and ice together. I’ve seen it made that way in Rio as well, but I’ve also seen it made Bobby’s way.

If you don’t have superfine sugar, you can use regular – just make sure it dissolves in the lime. Muddling might also be easier if you cut each wedge in half.

The only change to make it perfect (I lived in Rio de Janeiro for some 5 years) .. is to use finely crushed ice put into the mortar with the lime first … then muddle .. then add the cachaca.
