Ingredients

  1. 2 ounces Kentucky bourbon
  2. 1 tablespoon olive oil
  3. 1 tablespoon balsamic vinegar
  4. 1/2 teaspoon honey
  5. Pinch sea salt
  6. 1 cup cherry tomatoes, halved
  7. 8 ounces sliced bacon
  8. 4 slices country white bread
  9. Japanese mayonnaise, for spreading
  10. 4 crisp iceberg lettuce leaves, torn into pieces

Instructions

  1. In a small bowl, whisk together the bourbon, oil, vinegar, honey and a pinch of sea salt. Add the tomatoes and toss to coat. Let sit for at least 30 minutes to marinate.
  2. Preheat the oven to 400 degrees F. Line a baking sheet with parchment. Spread the bacon on the prepared baking sheet and bake until crispy, 12 to 15 minutes. Drain on paper towels, then break into large pieces.
  3. Using a 1 1/2-inch round pastry cutter, cut 6 circles out of a slice of bread. Spread some mayo on a bread round, then top with two pieces bacon, some lettuce, tomato half, another bread round, more mayo, bacon, tomato, lettuce and then, finally, another bread round. Skewer with a 4-inch wooden skewer. Repeat with the remaining ingredients and serve. Make sure your guests shoot it all in one big boy bite.

The bourbon marinate for the tomatoes is not very good. All you can taste is the bourbon!! The sandwich made as Jeff made it can not be eaten in one bite, as he did. It was messy and really just didn’t taste all that good. Sorry, Jeff, I’m usually a big fan of your sandwiches. I did like the bacon in a 400 degree oven tip!! That was great!!
