Ingredients
- 1 pound ground turkey (I like ground skinless dark meat)
- One 16-ounce can tomato sauce
- One 6-ounce can tomato paste
- 1 tablespoon chili powder
- 1 1/2 teaspoons kosher salt
- 1 teaspoon Italian seasoning
- 1/2 teaspoon freshly ground black pepper
- 2 garlic cloves, minced
- 1 bay leaf
- 1 large carrot, finely chopped
- 1/2 yellow onion, finely chopped
- 2 tablespoons chopped fresh parsley
- About 8 zucchini (I use 1 to 2 zucchini per person, depending on their size)
- Nonstick cooking spray or a drizzle of olive oil, for the skillet
- Kosher salt and freshly ground black pepper
- Grated Parmesan, for garnish
Instructions
- For the bolognese: In a stockpot, combine the ground turkey, tomato sauce, tomato paste, chili powder, salt, Italian seasoning, pepper, garlic, bay leaf, carrot, onion and 1/2 cup water. (Do not brown the turkey; everything goes in at once.) Cover, bring to a simmer and simmer over medium heat, stirring occasionally, until just slightly thickened, about 1 hour. Remove the bay leaf and stir in the parsley.
- For the voodles: Cut the zucchini into noodles using a julienne peeler or a spiral slicer.
- Heat a large skillet over medium-high heat; spray with cooking spray or drizzle with a little olive oil. Add the voodles and saute about 1 minute. Season with a little salt and pepper. Using a ladle, add the sauce and toss to coat.
- Add a few tablespoons of grated Parmesan and serve.

This Bolognese sauce was OMG delicious!! I love how easy it is to make with pantry items. It was a little spicy because I usually buy hot chili powder, but we love spicy food so it was perfect for our family. If you don’t love a bit of heat, just reduce the amount of chili powder. This was awesome! I was HIGHLY skeptical about not browning the meat or veggies, but it was wonderful. I used a 24 oz can of tomato sauce, added red pepper flakes instead of the
chili powder, and used ½ cup of white wine in place of the water. I also added

This is a go-to recipe for the whole family. When my vegetarian daughter comes home to visit, I pulse portobello mushrooms to substitute for the turkey plus several stalks of finely diced celery. Delicious and easy!!
This was a huge hit (including my dad who is a bit of a foodie and is picky about his bolognese). I made both zucchini noodles and regular pasta for everyone to choose. This packed flavor and was the perfect consistency. Will be making again and again!
Solid recipe! I harbored some healthy skepticism about it because I love pasta, but an emerging wheat sensitivity forced me to look for alternatives. If you’re looking for a tasty and satisfying healthy recipe, definitely give this one a try. It’s super easy to make, too!

I loved it. Usually after I eat spaghetti, I feel bloated and ready for a nap. This time I felt full without the bloat feeling. Next time I plan on trying spaghetti squash just to compare.
Delicious recipe! I only used 4 zucchini for the entire batch and didn’t heat the zucchini (just put the warm sauce on top, which in turn, heated the zucchini enough) because we don’t like it mushy. Otherwise, I followed the recipe exactly and it turned out fantastic! I will definitely make it again.
Husband was skeptical about voodles and typically doesn’t care for turkey. I did half ground turkey and half hot Italian turkey sausage. He’s already asking when I’m making it again. I guess that means he liked it.
