20-Minute Bolognese

Leftover hamburgers are the stars of this shortcut version of an Italian-American classic.

Ingredients

  1. 8 ounces uncooked spaghetti
  2. 1 tablespoon olive oil
  3. 1 small yellow onion, chopped fine
  4. 2 cooked burgers (3 ounces each), crumbled
  5. One 28-ounce can crushed or pureed tomatoes
  6. 1 tablespoon butter, optional
  7. Salt and pepper, to taste
  8. 6 large, fresh basil leaves, torn

Instructions

  1. Cook the spaghetti according to the package directions. Drain and set aside. 
  2. Heat the olive oil in a deep skillet over medium heat. Add the onions, and saute until lightly golden, 2 to 3 minutes. Add the meat, tomatoes and butter, if using. Bring to a boil. Season with the salt and pepper. Stir in the basil leaves. Reduce the heat to low, and cook for 20 minutes. 
  3. Add the cooked pasta to the skillet, and toss well to coat. Divide among deep bowls to serve.

Fantastic and so easy! I added a can of tomatoe sauce. I didn’t have basil so I used Italian seasoning and garlic. My onions were also already in the burgers so I put the garlic in the oil first.
