Yield: 9 bars

Ingredients

  1. Nonstick cooking spray, for pan
  2. 1/2 cup unsalted butter, chilled
  3. 3/4 cup sugar
  4. 1 1/2 cups all-purpose flour
  5. 1/2 teaspoon ground cinnamon
  6. Pinch kosher salt
  7. 1 egg
  8. 1/2 heaping cup sour cream
  9. 1/3 cup sugar
  10. 2 tablespoons lemon juice
  11. 1 tablespoon all-purpose flour
  12. 4 teaspoons cornstarch
  13. 2 teaspoons vanilla extract
  14. 1/2 teaspoon ground cinnamon
  15. 2 cups blueberries

Instructions

  1. Preheat the oven to 350 degrees F. Spray an 8-by-8-inch baking pan with cooking spray. Line the pan with parchment paper so that it hangs over on two sides. Spray the parchment.
  2. For the crust: In the bowl of a food processor, combine the butter, sugar, flour, cinnamon and salt. Process until the mixture starts to come together and clump, 1 minute. Remove 3/4 cup and reserve; press the remaining crust mixture evenly into the prepared baking pan. Set aside.
  3. For the filling: In a medium bowl, whisk together the egg, sour cream, sugar, lemon juice, flour, cornstarch, vanilla extract and cinnamon until smooth. Mix in 1 cup of the blueberries. Pour the filling mixture over the crust, shaking the pan gently to settle the custard and berries. Pour the remaining 1 cup blueberries over the top, spreading them evenly.
  4. Take the reserved crust and sprinkle it over the top of the berries, squeezing the mixture in your hands to encourage large lumps.
  5. Bake for 1 hour. Let cool. Remove the bars from the pan and cut into 9 pieces. Refrigerate until ready to serve.

Big hit for the 4th of July BBQ! I cut into 16 squares and that was perfect for a small crowd of 12. Everyone loved them.

Made these with fresh blueberries. Easy to make and tasted very good. The only change I made was to increase the cinnamon in the filling. I wrapped the bars in plastic wrap and stored them in a Tupperware container in the fridge. I actually prefer eating these on the second day.

Very tasty! Loved it.

Followed the recipe exactly and it was soooo good, especially with a scoop of soft serve vanilla! I used frozen blueberries and will be making this again!

Everywhere I go everyone asks me to bring the pie bars. They’re So Delicious!

These are good. I think they are better the second day and are more of a breakfast type food to me than a dessert. Not overly sweet as others have pointed out.

Can I make these ahead and freeze them? I’m afraid that they may be soggy after defrosting.

I had some blueberries that I needed to use. I found this recipe and thought I would give it a try. It was easy and good. Not to sweet.
Just made these again and I forgot the vanilla. Still a huge hit

A MAZING. These bars are delicious. I have made them twice and I wouldn’t change a thing, although i did used plain greek yogurt instead of sour cream. Always rave reviews from eaters!!!!
