Sunny’s Blueberry BBQ Sauce

Ingredients

  1. 1 pint (6 ounces) blueberries
  2. 3 tablespoons sambal chili paste
  3. 3 tablespoons ketchup
  4. 3 tablespoons light brown sugar
  5. 3 tablespoons apple cider
  6. 1 plum tomato, seeded and chopped
  7. Kosher salt, if needed

Instructions

  1. In a saucepot on medium heat, add the blueberries, sambal, ketchup, brown sugar, apple cider and tomatoes. Cook, while mashing the berries and tomatoes, until everything is broken down and the liquid begins to thicken, about 10 minutes. Simmer on low to further reduce if desired. Taste and add salt only if you feel it is needed.

I made the sauce to go with grilled pork chops, and it was delicious.  I used half of the recipe amount of brown sugar and made up for it with a tablespoon of hot honey.

Love this BBQ sauce.  I really wasn’t a fan of blueberries until I made this sauce.  It goes well with pork, beef, fish, burgers, etc.  I could eat it by itself.  At first you taste the mild sweetness and then the heat kicks in.  I’m making it in batches to take to my friends BBQ”s.

I misread the recipe and used apple cider vinegar, substituted blackberries and cut the chili paste by 50%, but still delicious!

Genius recipe! So simple and easy to make (wish I had thought of it). Right now I’m eating it with a spoon, but am saving enough to go on the chicken we are having for dinner. BTW, Sunny, I love your shirts and blouses. You always look terrific.
