Ingredients

  1. 2 pounds frozen blackberries, thawed
  2. 1 cup sugar plus more for dusting
  3. 3 tablespoons instant tapioca
  4. 1 tablespoon lemon juice
  5. 1 (7.75-ounce) packet butter biscuit mix (recommended: Bisquick Complete)
  6. 3/4 cup cream soda, divided

Instructions

  1. Preheat oven to 350 degrees F. Spray 8 (4-inch) ramekins with butter flavored cooking spray and set aside.
  2. In a bowl combine thawed blackberries, tapioca, lemon juice, 1/4 cup of cream soda and sugar. Transfer to ramekins.
  3. In a large bowl combined biscuit mix and remaining cream soda. Mix until well blended. Sprinkle biscuit mix over berries. Dust with sugar. Bake for 30 to 40 minutes. Serve warm.

My son’s favorite dessert.  He asks for Blackberry cobbler every year for his birthday.  This rocks.  I made it for his 40th birthday and the whole family wanted the BB cobbler instead of cake.  Even my ex-husband commented on how wonderful this was.  I did have to use Bisquick and cut in real butter.

Cannot find Bisquick Complete.  It really is great BB cobbler

Delicious but with 2 changes, both of which were forced on me:

1) no frozen Blackberries at market, so I got mixed berries which was terrific;
2) no Bisquick Complete either. I researched the difference and it appeared to be Buttermilk powder. So, I added 1/2 c. of 2% milk, which was all I had at home, and the dough came out more batter-y looking than the crumble appearance in the photo for this recipe. (I saw her make it, but it was so long ago, I don’t remember.) 
Results? AB FAB! This rocks! I might add a little kiss cream soda to the berries because it was very sweet, but it was so good, it still gets 5 stars!

I just served this amazing cobbler to a dinner party of six. It received Rave Reviews! I was able to put this simple cobbler together right before I served dinner, and it was ready to be served once everyone finished. I did substitute fresh blackberries for the frozen ones listed. It still was great. I can’t wait to make this again….next time I hope to have some wonderful ice cream to top it off!
