Blackberry Chip Ice Cream

Ingredients

  1. 2 pints fresh blackberries
  2. 1 1/4 cups sugar
  3. Juice of 1/2 lemon
  4. 1 1/2 cups half-and-half
  5. 5 large egg yolks
  6. 1 1/2 cups heavy cream
  7. 4 ounces semisweet chocolate

Instructions

  1. Combine the blackberries, 1/4 cup sugar and the lemon juice in a saucepan. Cook over low heat until the blackberries are broken down and syrupy, about 20 minutes.
  2. Pour the mixture through a fine-mesh strainer into a bowl, using a whisk or spoon to force as much of the deep purple liquid through as you can; set aside to cool. Discard the blackberry pulp and seeds.
  3. Heat the half-and-half and the remaining 1 cup sugar in a saucepan over medium-low heat. Meanwhile, whisk the egg yolks in a bowl until pale yellow and thick. Temper the egg yolks by splashing in a very small amount of the warm half-and-half mixture while whisking constantly. Slowly pour the tempered yolks into the saucepan with the half-and-half and cook over medium-low heat, stirring constantly, until thick enough to coat the back of a spoon, about 5 minutes.
  4. Stir the heavy cream into the bowl with the berry mixture, then pour in the egg mixture and stir to combine. Churn in an ice cream maker (in batches, if necessary) according to the maker’s instructions.
  5. Chop the chocolate into chunks and stir into the ice cream. Transfer to a freezer-safe container and freeze for several hours or overnight.

Excellent flavor and very easy to prepare. I made it last year and just picked my home grown blackberries, so I am going to make it again this year.

Very easy to make. I changed the flavor to strawberry due to not having enough blackberries on hand. Instead of using fresh I had canned strawberry syrup and just added chopped fresh strawberries to the ice cream maker. It didn’t freeze like I would like to see it even after putting it in the freezer over night. It tasted really creamy and good. I would try it again and maybe watch how its processed in the ice cream maker.

Made this recipe with our grand daughters. Our neighbors grew the blackberries. Not only did the children have a great time but the ice cream was fantastic. It was so good, the neighbors husband wouldn’t share any of the ice cream with his wife. Will certainly make it again.
