Chicken Corn Chowder Biscuit Bowls

Ingredients

  1. 2 tablespoons unsalted butter
  2. 1/2 red bell pepper, finely diced
  3. 1/2 onion, finely diced
  4. 2 tablespoons all-purpose flour
  5. 1 cup frozen corn kernels
  6. 1 cup chicken broth
  7. 4 ounces cream cheese
  8. 2 teaspoons chopped fresh thyme
  9. 1 teaspoon garlic powder
  10. 1/2 teaspoon paprika
  11. 2 cups shredded chicken (rotisserie chicken works perfectly)
  12. 2 scallions, thinly sliced
  13. Kosher salt and freshly ground black pepper
  14. Two 7.5-ounce cans refrigerated biscuits
  15. 2/3 cup shredded Cheddar

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Melt the butter in a saucepan over medium heat. Add the bell pepper and onion and cook until softened, about 3 minutes. Stir in the flour and cook 1 minute. Add the corn, chicken broth, cream cheese, thyme, garlic powder and paprika and cook, stirring, until the cream cheese is melted, 1 to 2 minutes. Fold in the chicken and scallions and season with salt and pepper. Set aside.
  3. Separate the biscuits, then cut each biscuit in half around its equator to make 2 thin discs (for a total of 32 discs). Using multiple mini muffin pans, place a dough disc into each of 32 cups and use your fingers to press the sides of the dough up to the top of each cup. Spoon in the corn chowder. Sprinkle the tops with the cheese and bake until golden and bubbly, 12 to 14 minutes. Gently remove the bites from the pan using a spoon and place on a plate.

I followed this recipe exactly as written, came out awesome!! The only difference is that I used regular size muffin tins, and had them as a meal not an appetizer! Adding to my meal rotation! Mini casseroles for a chilly night! Thanks Food network!

I was nervous to make this recipe (because there were not reviews) for a super bowl party I’m going to later, but it sounded so good and I really wanted to bring something different. My boyfriend and I just tasted the finish product and it’s delicious. I followed it exactly. I will definitely bring this to any future party.
