Bacon and Onion Biscuits

Ingredients

  1. 2 strips bacon
  2. 1 small onion, chopped
  3. 3 cups all-purpose flour, plus more for dusting
  4. 1/3 cup powdered milk
  5. 5 teaspoons baking powder
  6. 1 tablespoon sugar
  7. 2 teaspoons cream of tartar
  8. 2 teaspoons kosher salt
  9. 1 stick (8 tablespoons) cold butter, cut into bits, plus 4 tablespoons butter, melted
  10. 1/2 cup shortening
  11. 1 1/2 cups buttermilk

Instructions

  1. Preheat the oven to 450 degrees F.
  2. In a small skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes. Remove and drain on paper towels until cool, then chop into small pieces. Add the onion to the skillet with the bacon grease and cook over medium-low heat until light golden, about 5 minutes. Drain on paper towels.
  3. Stir together the flour, powdered milk, baking powder, sugar, cream of tartar and salt in a medium bowl. Using a pastry cutter, cut the chilled butter bits and shortening into the dry mixture until blended thoroughly. Stir in the bacon and onion. Fold in the buttermilk until the dough comes together.
  4. On a lightly floured surface, turn out the dough and use your hands to press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, about 15 minutes.

First time that I made biscuits, they were great!! Also put parchment paper in bottom of pan.

Hello food lovers are you there? How can I be the only one to review these pieces of heaven! I made them with my new years collards and black eye peas. I am already planning on making them again at the end of the week. Did I ever truly live before these biscuits?! This I cannot answer for sure but take it from me, my life will never be the same. Seriously THAT good. Only did a few things different. I buttered my cast iron before putting the biscuits in, I drizzeled some left over butter on top once I pulled them from the over. For cooking I added a couple more minutes checking regularly then turning on broil for about 45 seconds to get a good brown top. Look no further. Just try these. You won’t regret it!
