Ingredients
- Olive oil, to coat pan
- 2 bunches beet greens, washed and cut into 2-inch pieces
- 2 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes
- Zest and juice of 1/2 lemon
- Kosher salt and freshly ground pepper
Instructions
- Heat a medium saute pan coated with oil over medium heat until the oil shimmers. Add the beet greens and garlic, and toss until the greens are wilted and tender, 5 to 8 minutes. Add the red pepper flakes and lemon zest and juice, and toss. Season with salt and pepper.

Terrific and easy!
I didn’t have a lemon so I drizzled a bit of white wine vinegar at the end. Tasty!
Delicious! Didn’t change a thing. I will add this to my regular dishes. Beets are starting to harvest right now for me so this is perfect. Don’t forget to add the stems cut to under an inch for extra texture, colour and economy.
I only had a small bunch of beet greens so I added kale, half a diced red onion and part of a poblano pepper. Didn’t add red pepper flakes, but might next time since the poblano was mild. So tasty! Will definitely make again, and might add a splash of red wine vinegar. Great recipe with many options.
Easy and delicious side dish! My 15 year old daughter loved it much as I did! I used garlic powder instead of fresh garlic and used more black pepper instead of red pepper flakes. I look forward to making it again soon!

I love this recipe! I had grown an heirloom variety of beets and did so well it was almost a sin to toss the greens after all my hard work. Found this recipe and WOW! This recipe is my new favorite side dish. I cannot explain how deep and flavorful it was. So much better than the “watery” bland flavor I taste in sauteed spinach.

Great and easy recipe for beet greens. Mine had some super long stems so I added them to the pan first and covered for about 5-7 mins, then added the greens so the stems would get tender. Also added a good tsp of smoked paprika.
Loved this simple, yet tasty recipe! I grew beets for first time and just couldn’t throw out the greens. Found this and went for it- added kale, Swiss chard, sliced red onion and some black beans. Super delish! The lemon and pepper flakes sure take it up a notch. I’m going to try some of the other ideas mentioned in reviews, too.
