Instructions
- Cut 1 pound packaged cooked beets into wedges, reserving 1 tablespoon liquid from the package. Whisk the liquid with 1 tablespoon cider vinegar, 2 teaspoons grated ginger, 1/2 teaspoon honey and 2 tablespoons vegetable oil. Toss with the beets and season with salt and pepper.

Every easy to make taste very very good
These really were quick and easy to make —
I made these as part of a meal with a Mediterranean theme (spanokopita, etc.) They fit in beautifully and I received a number of positive comments. My only small adjustment was to use olive oil in place of the straight vegetable oil. I will make these again.
