Mexican Style Slaw

Ingredients

  1. 2 tablespoons soy sauce
  2. 2 small limes, juiced
  3. 1 tablespoon toasted sesame oil
  4. 1 tablespoon sugar
  5. 1 dried arbol chile or any small, spicy red dried chile, stemmed, seeded, and cut into rings
  6. 1 teaspoon salt
  7. 1 teaspoon freshly ground black pepper
  8. 2 cups shredded peeled jicama (from 1 small jicama)
  9. 3 medium raw beets, peeled and shredded
  10. 1 cucumber, peeled, seeded, and grated or thinly sliced

Instructions

  1. Dressing: Mix the soy sauce, lime juice, sesame oil, sugar, chile, salt and pepper in a medium bowl.
  2. Salad: In a large salad bowl, add the jicama, beets, and cucumber along with the dressing and toss to combine. Cover and refrigerate until chilled. Serve cold.

Excellent flavor!
Mixed the sesame oil with olive oil and used jalapenos since I did not have chili peppers.
It was quick and easy and a real delight!

Sesame oil was way too overpowering.  Will use Olive oil next time.  Also needed more of a tartness, so am adding balsamic vinegar to this.  Love the idea of a fresh beet slaw !

I love this recipe, but I did alter it a little bit. I used only a teaspoon of sesame oil and added a teaspoon of rice vinegar. I topped it off with some toasted sesame seeds too. SOOO good.

Haven’t made the recipe yet but wanted to say that after reading the reviews, you should use the Lighter Sesame Seed Oil (used for salads) instead of the Darker Sesame Oil (used in Asian cooking) for a lighter taste. This recipe sounds great…fresh and easy to prepare. I can’t wait to try it and Marcela’s Roasted Pork Loin with Pineapple Glaze.

I forgot to get sesame oil and used olive oil. This is the first time that I ate raw beets! The slaw is delicious, it is healthy and easy to prepare.
This is not the first recipe of Marcela’s that I have tried: I am compiling a binder with them!

My tastebuds were all set to savor the refreshing taste of the raw vegetables, but the only taste was sesame oil. I think this ingredient would be better substituted as the flavor didn’t mesh well with these particular vegetables. Way too overpowering!

we saw this on the show saturday a.m. and tried it that evening, it has such a wonderful fresh taste and is even better the following day. we will gladly trade traditional slaw for this tasty and tart mexican slaw! so much more refreshing and light. love her show and recipes!

The mix of the beets, cucumber and jicama was very refreshing. I only used 1 tblsp of soy because I didn’t want the soy to over power. I also added cayenne pepper for a little extra zing. I thought it was very refreshing as a summer salad!

The dressing for this salad had only one taste – sesame oil. I know I could fiddle around with the recipe and get the dressing right, but I’m not sure I like raw beets enough to spend the time to get it right.
