Beer-and-Bacon Toffee Sundaes

Ingredients

  1. 1/2 cup diced bacon (about 4 slices)
  2. 1 cup packed light brown sugar
  3. 1/2 cup light corn syrup
  4. 1/2 cup stout beer (I like Founders Breakfast Stout)
  5. 4 tablespoons unsalted butter
  6. 1/2 cup heavy cream
  7. Kosher salt and freshly ground pepper
  8. 2 pints good-quality vanilla ice cream
  9. 1 cup pecans, toasted and chopped
  10. Sea salt, for sprinkling

Instructions

  1. Put the bacon in a medium saucepan over medium heat and cook, stirring, until very crisp, about 10 minutes. Remove with a slotted spoon and drain on paper towels, reserving the fat in the pan.
  2. Add the brown sugar, corn syrup, beer, butter, heavy cream and a pinch each of kosher salt and pepper to the pan. Bring to a boil, then reduce the heat to medium low and simmer until slightly thickened, 6 to 8 minutes. Transfer to a bowl and refrigerate until ready to serve. 
  3. Scoop the ice cream into bowls and spoon the toffee sauce on top. Garnish with the crispy bacon bits, toasted pecans and sea salt.

Does anyone know what I could use to substitute for the beer? I hate the flavor and smell of beer. So what should I use instead?

This has bacon so it must be good, i cant drink yet but i still want some.

Sounds awful but it was so good. I made up the topping and kept it in the refrigerator. I bought a huge tub of expensive vanilla ice cream and lots of bacon. I picked a chocolate stout beer instead of Founders Breakfast Stout. The crunch of the bacon and pecan’s with the toffee sauce was an incredibly sinful combination. Try it you really will like it!
