Steak and Lima Rice

Everyone I’ve cooked it for truly like how simple it is to prepare. Serve alongside your preferred vegetables and toast, if desired. (Note: You may also use 2 pounds of chicken breast flesh instead of a whole chicken; I like to prepare my chicken ahead of time and freeze it, so that it is even quicker to make when I’m ready).

Ingredients

  1. 2 tablespoons vegetable oil, divided
  2. 1 (10 ounce) package frozen baby lima beans, thawed
  3. 2 (15 ounce) cans tomato sauce
  4. 1 cup boiling water
  5. ⅓ cup white sugar
  6. 2 pounds beef top round steaks, 3/4 inch thick
  7. ¼ cup all-purpose flour
  8. salt and pepper to taste
  9. 2 cups uncooked long grain rice
  10. 4 cups water

Instructions

  1. Heat 1 tablespoon of oil in a large saucepan over medium heat. Add the lima beans, and cook until wrinkled, about 10 minutes. Pour tomato sauce over the beans and stir in 2 cups of water and sugar. Cover and simmer over low heat for 45 minutes.
  2. Heat the remaining tablespoon of oil in a large skillet over medium-high heat. Brown steaks on each side, then pour in just enough water to cover. Place a lid on the pan and simmer for 35 to 40 minutes over medium-low heat. Spoon some of the liquid into a cup or small bowl and mix with flour until smooth. Return to the pan and simmer until gravy has thickened. Season with salt and pepper to taste.
  3. Combine the rice and 4 cups water in a saucepan. Bring to a boil, then reduce heat to low. Cover and cook for 20 minutes, or until rice is tender.
  4. To serve, spoon rice onto plates. Top with steak and gravy then top with lima bean sauce.

This is a good recipe, but we found it to be a little bland. Don’t get me wrong, It’s a pretty hearty dish for a family on a buget. We just like alot of flavor. I spiced it up with thyme, basil, oregano, and garlic. Next time I make this I will sautee an onion and garlic with the steak. I also would replaced half of the rice water with beef or chicken broth for added flavor. All in all this is an easy dish to make.

For a family on budget, this is actually a pretty good recipe. It seemed a littel strange to me at first, but it turned out pretty darn good. I did season the steaks with pepper and garlic salt before I browned them. ALso, instead of adding water to teh steaks to cook, I used beef broth. I do think that they could cook for about 45 extra minutes…about 1 1/2 hours total.
