Spiced Burgers With Cucumber Yogurt

Ingredients

  1. 1/2 seedless cucumber, peeled and finely chopped
  2. 1/2 cup low-fat plain Greek yogurt
  3. 1 tablespoon chopped fresh cilantro
  4. Kosher salt and freshly ground pepper
  5. 1 1/4 pounds 90 percent lean ground beef
  6. 1/4 cup finely chopped red onion
  7. 1 clove garlic, finely grated
  8. 1 1/2 teaspoons red or yellow curry powder
  9. 1 tablespoon extra-virgin olive oil
  10. 4 hamburger buns, split, toasted
  11. Sweet potato chips, for serving (optional)
  12. Pickled okra or other pickled vegetables, for serving (optional)

Instructions

  1. Mix the cucumber, yogurt, cilantro, 1/2 teaspoon salt, and pepper to taste in a bowl. Set aside while you make the burgers. 
  2. Combine the beef, onion, garlic, curry powder, 1/2 teaspoon salt and 1/8 teaspoon pepper in a bowl and mix with your hands until just combined. Form into four 4-inch-wide patties, about 1/2 inch thick. 
  3. Heat the olive oil in a large cast-iron skillet over medium-high heat. Add the burger patties and cook, turning once, until cooked through, 7 to 8 minutes for medium. 
  4. Place the burgers on the buns. Stir the cucumber-yogurt mixture and spoon on top. Serve the burgers with sweet potato chips and pickled okra.

Such a nice departure from the standard cheeseburger with lettuce, tomato and mayo. I didn’t have cilantro, so substituted parsley. This is GREAT if you aren’t a fan of cilantro. Also added 1/4 cup of feta cheese to the yogurt sauce just before serving.

I served with spicy pickles and roasted cauliflower tossed with curry and olive oil which complimented very well :

i made this the first day i read the magazine and loved it. i cant even imagine changing 1 thing. i was a little skeptical about the yogurt sauce only because it was plain so i thought it wouldnt taste good but it was so good. thanks again fnm for making dinner fast and simple.
