Ingredients

  1. 4 (6 ounce) filet mignon steaks
  2. seasoned salt, to taste
  3. cracked black pepper, to taste
  4. ¼ cup extra virgin olive oil
  5. ¼ cup balsamic vinegar
  6. 1 tablespoon Dijon mustard
  7. 2 teaspoons dried rosemary
  8. 1 tablespoon butter
  9. 2 cups onion slices
  10. 1 teaspoon white sugar
  11. 4 ounces blue cheese, crumbled

Instructions

  1. Season steaks with seasoned salt and black pepper, and arrange in a single layer in a large baking dish. In a bowl, whisk together olive oil, balsamic vinegar, mustard, and rosemary. Pour mixture over filets, and turn to coat. Marinate for up to 30 minutes.
  2. While you are marinating the meat, melt butter in a skillet over medium heat. Cook onion slices in butter until soft, then stir in sugar. Continue cooking until onions are caramelized. Set aside.
  3. Preheat grill for high heat on one side, and medium heat on the other side.
  4. Lightly oil the grill grate. Place steaks on the hot side of the grill, and cook for 10 minutes, turning once. When steaks are almost done, move to the cooler side of the grill. Top each filet with a quarter of the caramelized onions and blue cheese. Close the lid, and continue cooking until cheese is melted.

Followed the recipe, 4ish minutes per side on a 450* grill. Then off heat for the onions and blue cheese, hubby was blown away! I did add extra butter to the onions just because…..will have to make this again!! Thank you for sharing!

My normal filet marinade takes 24 hours, so when we decided at the last minute to make some filets we had in the freezer, I was on the hunt for something that didn’t need that long and turned to this recipe, given all the great reviews. For starters, the marinade smelled and tasted fantastic!! I was extremely excited about how my steak would taste, simply based on the marinade. It was also super quick to whip up with ingredients I had on hand. 5-stars for that. The only reason I’m rating it lower than 5 stars is because I definitely disagree with the 30 minute marinade time. We gave it about 45 mins (again, this was a last minute dinner idea so we were pressed for time), which was no where near long enough. =( The steaks barely picked up the flavoring of the marinade and because of that, tasted pretty bland. We’ll definitely be trying it again – but only when we have several hours (or overnight) to marinate.

Great flavor on the steak but blue cheese crumbles did not melt! Would have had to cook steaks too long to get it to melt. Disappointed!

Replaced white sugar brown sugar. Caramelizing was enhanced richly, to me. Didn’t serve wine, but meal was delicious. Also tweaked the recipe’s marinade. “Delish dish, simple and not time consuming at all!”
