Ingredients

  1. 5 pounds boneless beef short ribs
  2. 2 stalks celery, roughly chopped
  3. 1 carrot, roughly chopped
  4. 1 onion, roughly chopped
  5. 1/2 cup tomato paste
  6. 1 1/2 cups red wine
  7. 4 cups chicken broth
  8. 1 cup balsamic vinegar
  9. 1 teaspoon black peppercorns
  10. 5 cloves garlic
  11. 3 bay leaves
  12. 3 sprigs fresh thyme
  13. Buns, for serving

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Heat a pan over medium-high heat until hot, and then sear the ribs on all sides. Remove and set aside. Add the celery, carrots and onions and cook until caramelized, and then stir in the tomato paste and cook for 5 minutes. Pour in the wine to deglaze, scraping up the browned bits, and cook for 10 minutes. Add the broth and balsamic vinegar and bring to a boil. Pour over the ribs in a baking dish or roasting pan with the peppercorns, garlic, bay leaves and thyme and cover with foil. Bake for 4 hours.
  3. Pull the meat off the bones and serve on buns.

I am giving this recipe a middling rating because of the discrepancies in the recipe here vs. the tv show. In the episode, their short ribs were boneless and cooked off the bone. There was no shredding of the meat, it was simply sliced into large pieces and put on buns. Furthermore, the tv episode stated that the short ribs were cooked at 200 degrees for 12 hours, not 8 hours as stated here. Later, when the sandwich was assembled, there were vegetables and condiments put on a toasted bun. None of those ingredients nor toasting is mentioned here. So, while the short ribs sound delicious, this is not the same as what was shown on tv/ Oit is not a recipe for a burger — merely the preparation of the meat.
