Gyro (pronounced yeero) means “round” in Greek. Gyro is a type of meat served in Greece that is cooked on a vertical rotisserie. The meat is stacked and the rotisserie spins around as the meat is cooked. Pita means “pastry” in Greek and kia means “small.” When you put -kia at the end of a word, it is signaling that the item is small. Gyropitakia literally translates into “small gyro pie.”

Ingredients
- 1 pound favorite cooked lamb/beef blend gyro meat
- 8 ounces cream cheese, at room temperature
- 4 ounces goat cheese, at room temperature
- 2 ounces dried dill
- 2 ounces dried chives
- 12 sheets egg roll wrapper, cut in half
- 6 cups vegetable oil
- Dried oregano, for serving
Instructions
- Place the pieces of gyro meat into a food processor. Pulse until the meat is broken down and crumbled. Transfer to a large bowl, then add the cream cheese and goat cheese and mix well. Add the dill and chives and mix in.
- Place a trimmed egg roll wrapper on clean surface. Roll some filling between the palms of your hands, then place in the middle of the egg roll wrapper. Dab a bit of water on the edges, then fold opposite corners into a tringle. Seal with more water and gently pinch the sides closed to prevent the wonton from opening in the hot oil. Continue with the remaining wrappers and filling.
- Place the vegetable oil in a deep frying pan and heat until the oil reaches 375 degrees F.
- Place four gyropitakia in the frying pan and cook until a perfect golden brown, about 2 minutes per side. Drain on paper towels for 1 to 2 minutes. Repeat with the remaining gyropitakia.
- Sprinkle with a light dusting of oregano and enjoy!
