Gyro (pronounced yeero) means “round” in Greek. Gyro is a type of meat served in Greece that is cooked on a vertical rotisserie. The meat is stacked and the rotisserie spins around as the meat is cooked. Pita means “pastry” in Greek and kia means “small.” When you put -kia at the end of a word, it is signaling that the item is small. Gyropitakia literally translates into “small gyro pie.”

Ingredients

  1. 1 pound favorite cooked lamb/beef blend gyro meat
  2. 8 ounces cream cheese, at room temperature
  3. 4 ounces goat cheese, at room temperature
  4. 2 ounces dried dill
  5. 2 ounces dried chives
  6. 12 sheets egg roll wrapper, cut in half
  7. 6 cups vegetable oil
  8. Dried oregano, for serving

Instructions

  1. Place the pieces of gyro meat into a food processor. Pulse until the meat is broken down and crumbled. Transfer to a large bowl, then add the cream cheese and goat cheese and mix well. Add the dill and chives and mix in.
  2. Place a trimmed egg roll wrapper on clean surface. Roll some filling between the palms of your hands, then place in the middle of the egg roll wrapper. Dab a bit of water on the edges, then fold opposite corners into a tringle. Seal with more water and gently pinch the sides closed to prevent the wonton from opening in the hot oil. Continue with the remaining wrappers and filling.
  3. Place the vegetable oil in a deep frying pan and heat until the oil reaches 375 degrees F.
  4. Place four gyropitakia in the frying pan and cook until a perfect golden brown, about 2 minutes per side. Drain on paper towels for 1 to 2 minutes. Repeat with the remaining gyropitakia.
  5. Sprinkle with a light dusting of oregano and enjoy!
