Ingredients
- 4 cups heavy cream
- 3 ounces crumbled Gorgonzola cheese
- 3 tablespoons grated Parmesan cheese
- ¾ teaspoon salt
- ¾ teaspoon ground black pepper
- ⅛ teaspoon ground nutmeg
- 4 (8 ounce) fillets beef tenderloin
- ¼ teaspoon lemon pepper, or to taste
- ¼ teaspoon garlic powder, or to taste
- ¼ teaspoon onion powder, or to taste
- salt and ground black pepper to taste
- cooking spray
- 12 slices thick sliced bacon, chopped
- 4 green onions, chopped
Instructions
- Make sauce: Pour heavy cream into a saucepan and bring to a boil over medium heat. Reduce heat and simmer until cream is reduced by half, stirring occasionally, about 1 hour. Remove from heat; whisk in Gorgonzola cheese, Parmesan cheese, salt, pepper, and nutmeg until cheeses have melted. Cover to keep warm and set aside.
- Prepare steaks: Season beef with lemon pepper, garlic powder, onion powder, salt, and pepper; set aside to marinate.
- Meanwhile, place bacon in a large, deep skillet over medium-high heat. Cook, stirring occasionally, until evenly browned, about 10 minutes. Drain bacon on a paper towel-lined plate.
- Preheat an outdoor grill for medium-high heat. Lightly grease the grate with cooking spray.
- Cook steaks on the preheated grill until they begin to firm up and are reddish-pink and juicy in the center, 3 to 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium-rare. Transfer steaks to a plate; tent with foil to rest for 5 to 10 minutes.
- Serve steaks with Gorgonzola sauce and top with bacon and green onion.

Wow-good!! And would work on any cut of beef – including the cheaper cuts! I had sirloin and had to halve the recipe since it was just the two of us. Started step 2 at noon (seasoning the steaks) and returned to the fridge until an hour before we were going to start the grill (to bring steaks to room temperature) – so, roughly 5 hour marinate time. Sauce; I also halved (2c vs 4) but left the two cheese amounts as written and did 1/8 tsp nutmeg, salt and pepper. Even halved, the sauce almost took an hour to cook down (I did use a smaller burner) and STILL have leftover sauce! I am debating whether to use over chicken or burgers. This truly was amazing and even my “likes only S&P on his steaks” husband really, really enjoyed this! PS; also great with sautéd mushrooms. Thank you Shawn Alton!!
This is the most amazing steak I have ever had. I have been to many 5 star restaurants and my family all had the same comment. Tonight I made this for the third time since December and I can’t wait to make it again! I couldn’t recommend this any higher. I wish I could give it 10 stars!
Scott made this it’s really good
Just made the sauce and it was great. Best topping for a steak yet. Will definitely make it again. It also works well on pork chops.
Will definitely make again!
Love love love !
Using food available in the fridge I substituted blue cheese and grilled rib eye steak. I did not have any bacon. Oh well. I had lots of cream sauce leftover so we grilled steaks again a few days later. Tasted great.
My spouse who is a very good cook tried this recipe. The cream did not reduce. We had a liquid mess on our hands. Very disappointing.
The sauce was amazing! My whole family loved it, including grandkids. Will definitely make it again
Made it with mashed potatoes and garlic string beans. It was a perfect meal. I might consider throwing some butter in the pan with the steak and vegetable oil next time.
Not something we can make often but an excellent defendant treat.
I used this recipe for the cream sauce itself (my husband grills the steaks 🙂 and it was delicious, but I used half of the cream, 5 oz. of the cheese, and the same amount of the rest of the ingredients as I wanted a thicker sauce. It was delicious and turned out exactly as I wanted. I thought the nutmeg was an unusual addition, but it gave it a really nice flavor. Even though I halved the amount of cream, I still had quite a bit left over, so I steamed some broccoli, cauliflower, and carrots and mixed it in with them, and that worked well too. The sauce is delicious and versatile, and I would definitely like to make it again.
By far the best meal I have ever had!!!!!!!! The flavor for deft 5/5
excellent
excellent
Delicious!! Made it for Christmas Eve and will definitely continue to make, even my little ones enjoyed.
Absolutely loved it. my kids constantly ask me to make it for their birthdays.
The sauce did take longer than the recipe said in order to reduce by half. When I made it with my filets, I liked it. I came here to say that when I had the leftover sauce with chicken, I liked it even better! Made the full recipe of sauce if not more, because you can eat it on anything! Well, any meat at least.
Delicious!
It was delicious. Couldn’t find Gorgonzola cheese in my area so I used Brie cheese. It was amazing. Would love to try it with Gorgonzola cheese.
Amazing!!
