a simple and delectable soup made using corned beef in a can, cabbage, corn, tomatoes, and potatoes. Very tolerant and adaptable recipe. Every time this soup is warmed, the flavor gets better.

Ingredients

  1. 1 tablespoon oil
  2. 1 large onion, chopped
  3. 6 large potatoes, peeled and cubed
  4. 1 small head cabbage, chopped
  5. salt to taste
  6. 6 cups water, or as needed
  7. 1 (32 ounce) can diced tomatoes
  8. 2 (12 ounce) cans corned beef
  9. 1 (15 ounce) can cream-style corn
  10. 1 (15 ounce) can whole kernel corn, drained
  11. ground black pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  2. Add potatoes, cabbage, salt, and pepper. Add water to cover and bring to a boil. Reduce heat to a simmer and cook until potatoes are tender, about 20 minutes.
  3. Add diced tomatoes, corned beef, cream-style and kernel corns, and pepper. Cook until heated through, about 15 minutes.
  4. You can use fresh tomatoes instead of canned.
  5. If you do not like cabbage or are out, I have substituted 1 or 2 cans of carrots and it is still an excellent soup.

Halved the recipe and made as written. I did use red potatoes for a couple of reasons. Color and I hate peeling potatoes. When I use red I leave the peel on and that is where the nutrients come in. Win/win. Couple of things to point out here and that is if you make the full recipe you will need a LARGE pot. The other thing to point out is that this is plain with no seasoning prior to adding the corned beef. Once it is added though is amps up the flavor profile big time. It still needs something though. Herbs of some sort. Diced carrots would have been nice too. I will make this again but it needs some tweaks.
