Ingredients
- 1 loaf French or Italian bread
- Two 8-ounce packages cream cheese, at room temperature
- 10 ounces sharp Cheddar, grated (about 2 1/2 cups)
- 6 ounces corned beef, such as Carl Buddig, finely chopped
- 1 bunch green onions, finely chopped
- 1 medium tomato, finely chopped
- 1/2 red bell pepper, cored, seeded and finely chopped
- 1/2 teaspoon hot sauce, such as Tabasco
- 1/2 teaspoon chili powder
- Large corn chips, for serving
Instructions
- Preheat the oven to 350 degrees F.
- Cut an oval in the top of the load of bread, scooping out the bread in the center and make a “bread boat.” Place the bread on a cooking sheet.
- In a large bowl, mix the cream cheese, Cheddar, beef, green onions, tomatoes, bell peppers, hot sauce and chili powder until fully combined. Spoon the mixture into the hollow center of the bread loaf. Bake for 30 minutes, until bubbling, and serve warm with corn chips.

It was okay, not the greatest dip I’ve ever had and not the worst.
Made this tonight, very good. Agree that it does not stay hot very long. Cubed the cut out bread and seasoned and did a quick broil for dipping.

Waste of bread.
What’s the purpose of the bread if you serve with corn chips? Why not just heat the mixture in a small casserole dish and serve with the chips.
This recipe is delicious and has great flavor! I only made half, making half a bread “boat”, using the remaining bread for dipping. Because other reviews said it cooled down quickly (which it does) I added the corn chips (and bread) to the cookie sheet at the 15 minute mark when heating the dip AND broiled the dip on low as it cooled off and was eaten. It disappeared! Will definitely make it again.
The ease and flavor of this is amazing. Just made this for football Sunday and my family devoured this. It does tend to cool down pretty quickly so eat it as soon as it comes out of the oven. This is a delicious recipe!
