Ingredients

  1. 1 1/2 pounds ground beef
  2. 6 ounces fresh chorizo
  3. Kosher salt and freshly ground black pepper
  4. 1 jalapeno, minced
  5. 6 ounces mayonnaise
  6. 8 ounces roma tomato, diced
  7. 1/2 red onion, minced
  8. 1 bunch fresh cilantro, roughly chopped
  9. 2 limes, juiced
  10. Cayenne pepper
  11. 4 slices jalapeno jack cheese
  12. 4 hamburger buns
  13. 4 bib lettuce leaves

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix together the beef and chorizo, sprinkling with salt and pepper. Form 4 patties, each around 6 ounces.
  3. Blend the jalapeno with the mayonnaise to make a jalapeno aioli. Transfer to a bowl and set aside.
  4. Make a pico de gallo by combining the tomatoes, red onion, cilantro, lime juice, salt, pepper and cayenne to taste.
  5. Grill the burgers until well done, around 5 minutes per side. Top each with a slice of pepper jack cheese. Grill the buns.
  6. Build the burgers by spreading a layer of jalapeno aioli on the bottom bun, followed by a slice of lettuce, the burger, some pico de gallo and finally the top bun with more aioli.

Gotta love chorizo in a burger with its smoky heat. Next time I’d increase the amount of chorizo with the beef. The heat was matched well by the pico de gallo, although I’d decrease the amount of lime.
afleming321 I don’t know how you can rate a recipe when you altered it so significantly. Chorizo and pepperoni seem so much different to me.

The use of ground beef and chorizo are amazing. The flavour from the spicy chorizo just compliments the beef very well. I will try this burger.

Delicious burger. I used hot and spicy pepperoni since my grocery store didn’t have the chorizo. Also, to give it some more kick I used horseradish instead of mayo and added a teaspoon of sour cream and some spicy mustard with the minced jalepeno. The combinations of all the flavors were really good. Will definitely make again.
