Slow-Cooker Stout Beef Stew

Ingredients

  1. 2 pounds Yukon gold potatoes, unpeeled, cut into 1-inch pieces
  2. 1 pound carrots, peeled and cut into 1-inch pieces
  3. 2 large onions, finely chopped
  4. 2 cloves garlic, minced
  5. 2 tablespoons fresh parsley, finely chopped
  6. One 12-ounce bottle stout beer, such as Guinness Draught
  7. 1/4 cup olive oil
  8. 2 tablespoons light brown sugar
  9. 2 tablespoons tomato paste
  10. 1/2 cup all-purpose flour
  11. 1/2 teaspoon kosher salt
  12. 1/4 teaspoon freshly ground black pepper
  13. One 4-pound boneless beef chuck roast, trimmed and cut into 1 1/2-inch pieces
  14. 2 tablespoons unsalted butter
  15. 2 tablespoons canola oil
  16. 3 cups chicken broth

Instructions

  1. In a 6-quart slow cooker, combine the potatoes, carrots, onions, garlic, parsley, stout, olive oil, brown sugar and tomato paste. In a separate bowl, mix the flour with the salt and pepper. Dredge the beef pieces in the dry mixture, shaking off any excess.
  2. In a medium skillet, melt the butter and canola oil over medium-high heat. In batches, add the beef pieces and sear until brown, about 2 minutes, transferring the beef to the slow cooker as done. Remove the last batch of beef to the slow cooker, add 1 cup of the chicken broth to the skillet and scrape up all the brown bits that have accumulated on the bottom of the pan. Add the pan juices to the slow cooker, along with the remaining 2 cups of chicken broth. Cover, and cook on high for 6 hours.

Should have read more of the negative reviews. Didn’t understand the chicken broth or the brown sugar or olive oil? Definitely on the sweet side. Going to add a bullion cube to try and salvage.

This was absolutely terrible, a greasy mess, and an unfavorable dish that and I wasted $7 on chunks of beef stew meat.  There was so much oil in this dish that I had to use Gordan Ramsey’s method to salvage the dish.  I highly recommend AVOIDING this dish at all costs.  This is the second time I’ve attempted a Trisha recipe ONLY to be disappointed.  This is it.  I’m done.  If the Neelys do not have a recipe for a dish I’m looking for, I will simply call mom or pass on the dish altogether.
