Slow Cooker Ginger Beef Stew

Allspice and ginger create levels of flavor in this easy dinner loaded with tender chunks of stewed beef, potatoes and carrots.

Ingredients

  1. 1 1/2 pounds cubed beef stew meat
  2. 1 tablespoon all-purpose flour
  3. 2 teaspoons curry powder
  4. 1/2 teaspoon ground allspice
  5. Kosher salt and freshly ground pepper
  6. 2 large sweet potatoes (about 1 1/2 pounds), peeled and cut into 2-inch pieces
  7. 1 red bell pepper, cut into 1-inch pieces
  8. 1 13-to-14-ounce can coconut milk
  9. 2 tablespoons finely chopped peeled ginger
  10. Juice of 1 lime, plus wedges for serving
  11. 4 scallions, sliced
  12. 2 cups cooked white rice, for serving

Instructions

  1. Toss the beef with the flour, curry powder, allspice, 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl; transfer the beef to a 6-quart slow cooker. Add the sweet potatoes and bell pepper to the bowl and toss to coat with any remaining flour mixture. Spread over the beef. Whisk the coconut milk and ginger in a bowl until combined; pour over the vegetables.
  2. Cover the slow cooker and cook on low, 7 hours. Uncover, stir well and let stand 10 minutes. Skim off any fat from the top. Stir in the lime juice and season with salt. Serve over rice; top with scallions and serve with lime wedges.

This was very tasty.! I made it with butternut squash because I didn’t have sweet potatoes. Pork that I browned on the stove before adding to the spices, because I didn’t have beef. The fresh ginger gives such a nice “heat” to the flavor.
I would definitely make this again and use sweet potatoes.

This stew is delicious! Plenty of moisture and tons of flavor. The only thing to add would be a bit more beef. I used jasmine rice and it complemented the curry nicely.

After two hours of cooking, it became clear that more cooking liquid was needed (glad I’m home) so have added beef broth.  I added 1/2 jalapeño at the beginning so it has a nice and spicy flavor.  I also browned everything stovetop before layering in slow cooker.  Will check doneness at about 5 hours.  4 stars only because dish isn’t done.

This was rejected by everyone. Starchy. flavorless and just no taste.  I know I did not mess up the recipe. Apparently all recipes are not reviewed and sampled. A waste of time and money,

First time I made this, I cooked it for 7 hours and the beef was very overcooked and didn’t have enough liquid, even at the end, to cover all the contents. I cubed the sweet potatoes smaller than 2″ as I knew they weren’t going to be cooked and only put about 3/4 pound of potatoes. I also halved the curry as I’m not a huge fan of the spice, and left out the lime juice and scallions, and used brown rice instead of white. Tasted good other than the overcooked meat, and I’ll be using 5-6 hours of cooking time instead.

We were disappointed in this dish. It needed much more flavor, especially salt! And the sweet potatoes did not finish cooking even in 7 hours….I pulled them out , finished them in the microwave and put them back in the pot in order to finish the dish off.
