Incorrect Steak with Dixon Red Chili Sauce

Ingredients

  1. 1 (10 to 12-ounce) New York steak, prepared medium-rare
  2. Dixon red chili sauce, recipe follows
  3. White cheddar, fine quality, grated, to taste
  4. 1 egg, fried, sunny side up
  5. 3 ounces canola or other vegetable oil
  6. 4 tablespoons flour
  7. 1 cup red chili puree, recipe follows
  8. 1/2 teaspoon salt
  9. 1 cup chicken broth
  10. 12 dried New Mexican red chiles, lightly oven roasted, stems broken off, and seeds shaken out or 1/2 cup pure New Mexican red chile powder (medium to mild; Medium Dixon is best)
  11. 1 clove garlic
  12. 1/2 teaspoon salt
  13. 1/2 teaspoon dry Mexican leaf oregano
  14. 1/2 cup hot water

Instructions

  1. Top steak with a ladle of Dixon red chili sauce. Sprinkle with shredded cheddar cheese and top with fried egg. The heat from the sizzling steak, warm chili sauce and egg will melt the cheese.
  2. Heat oil in saute pan. Stir in the flour and cook to a golden brown. Add the red chili puree and salt, and cook another 30 seconds, stirring constantly. Add the broth little by little, whisking it smooth. Add enough broth to make a medium-thin red sauce.
  3. Place all ingredients in a blender and zap into a smooth puree. Be sure to blend long enough to completely puree the garlic. The mixture should be loose enough to pour. If necessary, add a bit more water.

I can’t believe there’s only one review for this great recipe. I’ve made
it before and it’s brilliant. Lived in CO and NM long ago, and
understand good ways to apply chile. beef, cheese, eggs are all great
accompaniments to red or green chile sauces. And the puree and sauce
recipes here are legit. They definitely work. If you can find Dixon
powder,use it. Easier and it’s the best tasting red chile powder
available, imo. In act, you can mail order it here (been doing so for
decades myself – good stuff!):

Excellent recipe for Saturday morning camp out breakfast. Lots of flavor, good protein source to fuel up for a day of hiking in the mountains. Served with Texas toast and hashbrowns.
