Yield: 6 servings

Ingredients

  1. 2 slices bacon, chopped
  2. 1 onion, chopped
  3. 3 cloves garlic, minced
  4. 1/2 pound ground beef
  5. One 12-ounce bottle beer
  6. 3 cups black beans
  7. Two 14-ounce cans tomato sauce
  8. One 14-ounce can crushed tomatoes
  9. 2 1/2 tablespoons chili powder
  10. 1 teaspoon crushed red pepper flakes
  11. 1 teaspoon cocoa powder
  12. Kosher salt
  13. Sour cream, for garnish
  14. Grated Cheddar, for garnish
  15. Chopped scallions, for garnish

Instructions

  1. In a large saucepan or small Dutch oven, cook the bacon over medium heat until the fat renders and the bacon is cooked, about 5 minutes. Add the onion and cook until the onion softens, about 5 more minutes. Add the garlic and cook for another minute. Add the beef and cook until no longer pink. Raise the heat to medium-high, deglaze with the beer, and allow to bubble and boil for 2 to 3 minutes. Add the beans, tomato sauce, crushed tomatoes, chili powder, red pepper flakes, cocoa, and salt. Stir to combine well. Simmer for 30 minutes, or more, and serve with sour cream, shredded cheese, and chopped scallion, if desired.

When I’m craving a Tex Mex style chili this is my favorite. It reminds me of the type I get at a comfort food restaurant. I have been making this for a long time! The chocolate and beer combination is a winner. I do like to use the four cheese Mexican blend cheese for garnish. The only changes I have made over the years is increasing the ground beef from a half pound to three-quarters pound and using a chunky tomato style instead of the crushed because of a texture preference.

This is the “it” chili recipe. For years my guy has been saying my Super Bowl chili is too sweet and/or not spicy enough. I thought I would give this recipe a try, since it does say “game day” chili, and he loved it! Said it was perfect. I did use 1 lb of beef to make it more meaty, and 1 cup pinto beans plus 2 cups black beans, everything else was the same. THANK YOU Melissa!!

I love this recipe.  It doubles well and I use venison too!  My only changes is that I use 1 lb of meat and 3  cans black beans.  Family and guest favorite!

Ive been making chili with this recipe for years, except we use ground venison in place or the beef and I cut down on the chili powder and the cayenne. It is so good and it is a family favorite. We LOVE it.

Thank you Melissa….. everyone in my family enjoyed your chili. My husband even said it was probably the best he’s ever had. This was my first time EVER making chili and watching your show inspired me to make it. Thanks again for your recipes.

Delicious chili, I used 1 29oz can crushed tomatoes, 1 15oz can tomato sauce, added 1 tsp cumin & a bit of dried oregano ( just to use up a bit I had left from drying some fresh oregano) and I let it simmer much longer than 30 min. This recipe is a Keeper!
