Ingredients
- 2 tablespoons unsalted butter, melted
- 1 tablespoon miso paste (yellow or white)
- 1 clove garlic, grated
- 1 scallion, finely chopped
- 1/2 pound green beans, trimmed
- 2 tablespoons canola oil
- Kosher salt
- Store-bought crispy onions, for garnish
Instructions
- Make the sauce: Whisk together the melted butter, miso paste, garlic, scallion and 1 tablespoon water in a small bowl until combined. Set aside.
- Blister the green beans: Pat the green beans dry with a paper towel. Add the canola oil to a large cast-iron skillet over medium-high heat. When the oil is hot, carefully add the green beans and sprinkle with salt. Cook until browned, about 3 minutes on each side.
- Finish the dish: Add the miso butter mixture and turn the heat off. Using tongs, toss the beans with the sauce to coat, adding a tablespoon of water if necessary to loosen the sauce. Garnish with the crispy onions.

Excellent! Could even pull back a bit on the butter and unsalted was perfect! Our new fav!
I loved adding miso to green beans and will be cooking it this way from now on. I substituted coconut oil for the butter and canola oil and loved the addition of that flavor, too.
I made this last Thanksgiving, and again this Thanksgiving. It was so easy. Just as delicious as Ronnie Woo’s beautiful body.
I have made this recipe for Thanksgiving! Delicious! Made the sauce and use substituted broccoli for great beans! Yep! It was Delicious!!!!
This was DELISH!!!! The meat eaters as well as the vegetarian thought it was great. Used it for Christmas dinner and making it tonight.
Easy and delicious!
Easy and delicious, a real keeper!
Blistering the green beans caramelizes the sugar in the green beans, which marries well with the miso and garlic. That combination was memorable, but I have two caveats: I inadvertently doubled the amount of green beans, and I think that ratio was spot on (so either double the beans or halve the butter mixture). Second, don’t add the fried onions until you plate. If you have leftovers with the fried onions, they will get soggy.
This was a no in my book, I love miso on fish, but it just didn’t go on my green beans.
This is so good and easy. I buy the onions this time year from Sam’s club to use all year. The bag is 26.5 ounces.
Super flavorful! And easy!
