Ingredients

  1. 1 tablespoon olive oil
  2. 1/2 cup medium diced carrots
  3. 1/2 cup medium diced celery
  4. 1/2 cup medium diced onions
  5. 1 tablespoon minced garlic
  6. 1 tablespoon curry powder
  7. 1 1/2 teaspoons ground coriander
  8. One 15-ounce can chickpeas, drained and rinsed
  9. One 13.5-ounce can coconut milk
  10. 1/2 lime, juiced
  11. Kosher salt and freshly ground black pepper
  12. Couscous, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the carrots, celery, onions and garlic and slowly saute until translucent, about 10 minutes. Add in the curry powder and coriander and toast the spices until fragrant, about 3 minutes. Add the chickpeas and coconut milk and bring to a simmer. Simmer over medium heat until the flavors have melded, 20 to 30 minutes. Add the lime juice and season with salt and pepper. Put some couscous in bowls and serve the chana masala on top.

This was a good Chana Masala, however I don’t use lime, I use rice, and I use more Chana, Chick peas. I also use fresh coriander at the end, and roti or pita bread. The kids like it better

This was delicious. The two things I changed was that I added a small can of tomatoes and I used white rice instead of couscous. I also cooked it for longer then the recipe stated so the flavors were stronger. Other than those two things, it was delicious and I would make it again.
