Black Bean Burger

Ingredients

  1. 2 cups black beans, drained and mashed with a fork
  2. 1 cup seasoned breadcrumbs
  3. 1/4 cup grated onions
  4. 1/2 teaspoon chili powder
  5. 1 egg
  6. Salt and freshly ground black pepper
  7. Canola oil, for oiling grill pan
  8. 1 to 2 kaiser rolls
  9. Arugula, for serving
  10. Sliced tomatoes, for serving
  11. Mayonnaise, for serving

Instructions

  1. Mix together the beans, breadcrumbs, onions, chili powder, egg and some salt and pepper in a medium bowl. Form the mixture into 1 big (or 2 smaller) patties.
  2. Preheat a grill pan over medium-high heat and add some canola oil. Cook the burger 4 minutes per side. Serve on a kaiser roll with arugula, tomato slices and mayo.

We loved them – I used Baharat spice blend instead of chili powder and seasoned panko crumbs. Although Baharat is a middle eastern spice, it lends a real southwest flavour to this burger. Absolutely delicious and incredibly easy for a quick fix, healthy meal!

I used two 15.5 oz cans of black beans, two eggs, and no onion (my onion went bad sadly). I beat the eggs, added the black beans, and mixed them well. Then I added the rest of the ingredients and mixed for about a minute until everything was well blended. The mixture held together as well as a burger made from beef… maybe even better than some beef burgers. It made 4 to 6 patties. I just topped mine with tomato and sautéed spinach. They turned out great so I’ll definitely be making again, hopefully with an onion next time

Ree’s recipe in her cookbook is a bit different than this one, but they have many similarities.  Overall, a good burger.  Filling, tasty, cheesy.  Good crust on the outside.  However, the center was very mushy, and both my husband and I felt the texture was a bit off-putting.  I would love if maybe t had something else in it to give it some more texture…maybe cooked brown rice?  Maybe diced red pepper?

It was good for a veggie burger, but more than likely not something I would try again. I used half of the bread crumbs and 1 egg; I would recommend two eggs. Instead of the spices I just bought a seasoning packet and added garlic and a few dashes of worchishire sauce which really helped with the flavor. I also cooked the onions before adding them in. They fell apart for me when I tried to eat a patty which is why I’d recommend double the eggs listed.

Yummy. We added a more spice and served it with roasted red onions, zucchini, Cauliflower, baby carrots and flatbread with hummus. We loved it!

Made these last night … delicious! I did add my own touches with sautéed diced mushrooms and red bell pepper. Wanted a little heat to it so added chipotle and cayenne. So good definitely a keeper !
