Tuscan Bean Soup

Ingredients

  1. 2 tablespoons olive oil
  2. 5 cloves garlic, minced
  3. 1 medium onion, diced
  4. One 16-ounce can tomato paste
  5. 2 teaspoons red pepper flakes, plus more if desired
  6. 1 teaspoon dried oregano
  7. 3/4 cup dry white wine
  8. One 28-ounce can whole or diced tomatoes
  9. Three 14.5-ounce cans great Northern beans, drained and rinsed
  10. 6 cups low-sodium chicken broth
  11. Kosher salt and freshly ground black pepper
  12. 1 bunch kale, plus more if desired
  13. Fresh Parmesan shavings, for garnish
  14. Plenty of torn fresh basil, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the garlic and onions and cook, stirring, for 3 to 4 minutes. Add the tomato paste and cook, stirring, about 2 minutes, getting lots of flavor in the bottom of the pot. Stir in the red pepper flakes and dried oregano; cook and stir for another 30 seconds.
  2. Pour in the wine and whisk, scraping the bottom of the pot a bit as you go. Allow this to bubble up and reduce, cooking until the wine is reduced by half, about 10 minutes. Add the canned tomatoes, then the beans. Pour in the chicken broth. Stir to combine, bring to a simmer and simmer for 20 to 25 minutes. Sprinkle in salt and pepper to taste.
  3. Rinse the kale and tear it into chunks. Stir it into the soup (it’ll shrink quite a bit, so don’t be afraid when you first add it!). Simmer the soup for another 5 minutes, tasting and adding salt and pepper (or even more red pepper flakes) as needed.
  4. Transfer the soup to a large serving bowl. Add big, fat Parmesan shavings and garnish with torn basil.

I halved the recipe and added celery otherwise no changes. Excellent flavor.

After making the corrections (i.e, 6oz of tomato paste) my family enjoyed this recipe. I substituted vegetable broth for chicken broth to make it vegetarian. I also made some sausage crumbles for family members to add to their bowls since I am the sole vegetarian. Used spinach instead of kale and fire roasted diced tomatoes since that is what I had on hand. This one was a keeper.

So yummy! This is my 3rd time making this soup. My family loves it. I shared the recipe with my sister and she has made it twice. This is a keeper. One of our favorite soups ,and easy to make.

Unfortunately I used the stated amount of tomato paste rather than just six ounces so it was quite a strong tomato flavor. Still tasty but would have been better if I hadn’t done hat. Used the two tablespoons of red pepper flakes and found it a bit too much, too. Swapped out kale for spinach, personal preference. All in all a nice soup.

The soup was quite good. As others suggested, I used 1- 6 oz can tomato paste. But I also felt the red peppers flakes were too much. I’d suggest starting with 1/2 teaspoon first, as you can always add more later. In the end, I found I preferred to leave the kale in longer before serving so that it became softer, so you may want to consider allowing more time for that. Lastly, I added some sweet Italian sausage which I crumbled and browned and added to that which I had leftover. It was delicious!

I love veggies but I’m not big on tomatoes.  I added about half a pound of carrots, one bunch of celery stalks, and about 8 oz of mushrooms.  I did a small can of tomato paste and only one can of diced tomatoes.  I also only did 4 cups of chicken broth because, in true Ree fashion, I added a cup  of heavy cream to balance out the tomato flavor for me.  I know this still leaves me a cup short, but I don’t like thin soups.  Overall a very good, and generally healthy soup (if you don’t add the heavy cream haha!).  As my hubby said “bookmark this one, it’s a keeper”
