Grilled Teriyaki Shrimp and Pineapple Skewers

These shrimp skewers are quick and simple to prepare, and they cook in only a few minutes. They are ideal for weekend or evening supper gatherings in the summer. To make dinner even faster, prepare the sauce in advance. Use what you have on hand; I prefer to use large shrimp (21 to 25 per pound).

Ingredients

  1. ⅓ cup water
  2. 2 tablespoons soy sauce
  3. 2 tablespoons brown sugar
  4. 1 teaspoon honey
  5. 1 teaspoon grated fresh garlic
  6. 1 teaspoon grated fresh ginger
  7. 1 pound jumbo shrimp
  8. ½ fresh pineapple, cored and cut into 1 1/2-inch pieces
  9. skewers
  10. 2 tablespoons minced fresh cilantro (Optional)
  11. 1 tablespoon toasted sesame seeds (Optional)

Instructions

  1. Combine water, soy sauce, brown sugar, honey, garlic, and ginger in a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until sauce has reduced and thickened slightly, 8 to 10 minutes.
  2. Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread shrimp and pineapple alternately onto skewers and place on a platter.
  3. Arrange skewers on the hot grate. Grill 2 to 3 minutes per side, or until shrimp is opaque and cooked through. Turn grill to low heat and brush sauce on both sides of skewers. Transfer to a serving platter and sprinkle with cilantro and sesame seeds.
  4. Try to cut the pineapple chunks approximately the same size as the shrimp for even grilling.
  5. If using wooden skewers, soak in water for 30 minutes before using to prevent burning.
  6. Please note the magazine version of this recipe doubles the sauce to have some left while serving.

This is a great recipe! I doubled the marinade and soaked the shrimp in half of it for about an hour. I used the other half to baste it on the grill. It was wonderful. I’d suggest you prepare the ingredients ahead of time. It takes a while to peel and grate the ginger. The ingredients are well balanced and nothing is overpowering. At the suggestion of others, I served it with cilantro lime rice. I’ll make this again and again.

The sauce flavor was really good. The skewers were hard to do, not on a grill. Next time, we’ll try to do this in a pan. After I screwed these up, my hubby gave me grilling lessons! LOL

I followed directions exactly. I don’t know what happened but the shrimp was mushy and we couldn’t even eat it. My husband kept saying that shrimp should be marinated before cooking but I’m a stickler for following the recipe. Don’t think I’ll try again.

pretty good, but sauce was way too thin. would be worth thickening so it stays on better in general. we also added orange and green bell peppers to the kabobs to make a full meal

I liked this recipe very much. I grilled the shrimp, pineapple and red peppers together in a grilling pan. I precooked the red pepper first in a frying pan with olive oil. I made jasmine rice and served the shrimp mixture over the rice with the sauce. It was delicious and have made it several times.

I made this for my family last night and everyone said it’s a keeper! I could not find my skewers( we recently moved)so I cooked in on a grill pan and will probably do that again. The only thing I would do differently is I would double the sauce the next time. Also, this recipe does not say how many servings it yields, so I would do 1-1/2 lbs for 4 people.

Absolutely delicious! My husband puts tartar sauce on all fish but after one bite of this, he put the tartar sauce away. I used pre-cooked prawns., which marinated for an hour and then very quickly grilled them at high heat. The cilantro and toasted sesame seeds really added to the taste. Will definitely make again.

I added more garlic and brown sugar to taste. I also marinated the shrimp in lime juice and olive oil for 1 hour prior to grilling, I finished it with “everything bagel” shake from trader joes. it was amazing
