I’ve prepared this grilled halibut with herb butter numerous times and it is always fantastic. Although halibut is my preferred seafood, this recipe works for many different kinds of fish.

Ingredients
- ¾ cup butter, softened
- 1 tablespoon lemon juice
- 1 ½ teaspoons onion powder
- 1 ½ teaspoons dried parsley
- ¾ teaspoon dried dill weed (Optional)
- ¼ teaspoon white sugar (Optional)
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 4 (1-inch thick) halibut steaks
Instructions
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Stir butter, lemon juice, onion powder, parsley, dill, sugar, salt, and pepper together in a bowl; spread evenly over halibut steaks.
- Cook on the preheated grill until fish flakes easily with a fork, 5 to 6 minutes per side.

Tasty. Simple to make.
We love it. Tried it on the grill and got a flame show like the hibachi chefs. I wrap it in foil and cook in the oven. It’s still a 5 star recipe even when the instructions are wrong.
Great way to torch $40 worth of halibut. Follow the workarounds listed below but don’t try to cook buttered fish on an open flame! Will fail even with indirect grilling.
Worked great on my Traeger grill, just kept it on a wire rack skin side down(had filets, not steaks) and did not flip during cook. Gave it a quick finish under the broiler for slightly browned top. Delicious!

Use a digital thermometer and cook to 120 deg F. and it will be perfect everytime. Nice and moist. Great recipe.
Great flavor, would have used a bit less butter, but otherwise the flavor was great. Used fresh Halibut from Costco, and used a copper grilling mat to keep the flare ups off of the fish. Worked out well. Fish was flavorful and moist, yet flaky after grilling. Served with asparagus and a white wine…bon appetit!
Decreased salt for my heart healthy husband and it was still good! Easy to make! Will make it again!!
I added diced onion and basil. Smeared the mixture over the fish and let it sit in the fridge for about an hour before grilling. Very tasty.
The kids were mad I didn’t make more. I grilled on a cedar plank, so no flipping required.
After reading the reviews I decided to make the butter-lemon sauce on the side and added a bit onto the fish with some olive oil. I added a shallot instead of onion powder. The fish was moist and perfectly cooked on the grill by my husband.

Easy and delicious! Everyone in the family loved it. The butter does cause flames on the grill. I will tent each piece in tin foil the next time.
We had a problem with our grill so I baked this at 375 for 25-30 minutes it was delicious and so moist. We will use this recipe again!
