Braised Bbq Spareribs

Yield: 8 to 16 servings

Ingredients

  1. 1/2 cup Cajun dry spice rub, recipe follows
  2. 8 racks spareribs
  3. 2 large onions, sliced
  4. Water or chicken stock
  5. Barbecue sauce
  6. 1/4 cup Kosher salt
  7. 1/4 cup cayenne
  8. 1/4 cup paprika
  9. 1/4 cup garlic granules
  10. 1/4 cup ground black pepper
  11. 2 tablespoons onion granules
  12. 2 tablespoons oregano, dry
  13. 2 tablespoons thyme, dry

Instructions

  1. In a large roasting or sheet pan, scatter half the onions. Rub the ribs with Cajun spices and overlap ribs onto the onions. Scatter remaining onions over the ribs. Pour a little water or stock into the pan. Cover tightly with foil and put into a preheated 350 degree oven, for 1 to 2 hours or until ribs are tender. When cooked, brush with barbecue sauce and grill or broil to glaze.
  2. Mix all ingredients and store in a jar.

I used baby back ribs for this recipe and they were outstanding; the best I have ever made! Since I already had store-bought Cajun seasoning, I used it. I also took the membrane off the bone side of the ribs and cooked them at 300 F for 3 hours. The ribs fell off the bone! Outstanding!
