Banana Pudding

Ingredients

  1. 4 large eggs
  2. 3/4 cup sugar
  3. 3 tablespoons all-purpose flour
  4. 1/2 teaspoon plus a pinch salt
  5. 2 cups whole milk
  6. 1/2 teaspoon vanilla extract
  7. 30 to 40 vanilla wafers
  8. 3 to 4 medium ripe bananas

Instructions

  1. Separate the yolks from the whites of 3 of the eggs; set aside the whites. Add the remaining whole egg to the yolks.
  2. In a saucepan, whisk together 1/2 cup sugar, the flour and 1/2 teaspoon salt. Stir in the whole egg and 3 yolks, and then stir in the milk. Cook uncovered, stirring often, until the mixture thickens, about 10 minutes. Remove from the heat and stir in the vanilla.
  3. Preheat the oven to 425 degrees F.
  4. Spread a thin layer of the pudding in a 1 1/2-quart casserole dish. Arrange a layer of vanilla wafers on top of the pudding. Thinly slice the bananas crosswise, about 1/8 inch thick, and arrange a layer of banana slices over the wafers. Spread one-third of the remaining pudding over the bananas and continue layering wafers, bananas and pudding, ending with pudding.
  5. To make the meringue, beat the reserved egg whites with a pinch of salt until they are stiff. Gradually beat in the remaining 1/4 cup sugar and continue beating until the whites will not slide out of the mixing bowl when it is tilted.
  6. Spread the meringue over the pudding with a spatula, making a few decorative peaks on top, and bake until the meringue is lightly browned, 5 minutes.

The tase is great and it is so simple! I agree that if your family likes pudding, double the recipe because 2 cups of pudding did not go far enough for more than 1 layer in my casserole dish.

Very good and tasty you might want to double on ingredients bc I didn’t have enough pudding and let it sit in fridge for 2 hours so it’s really good

This turned out awesome! Except for the whipped topping. I dropped a little of the yoke into the egg white and it did not fluff up to make the topping. Other than that, instead of the cookies I used gram crackers. I added nutmeg, cinnamon, cardamom to the saucepan. Definitely mix all dry ingredients and egg together before adding the milk. I did forget to add vanilla extract but it still turned out great! This is a winner! Enjoy!

Delicious and easy!! Perfect for a quick dessert. I am inspired to make it with a lemon twist using lemon coolers and berries or kiwi in place of the bananas and Nilla Wafers.

This recipe is amazing… Made straight forward. It’s perfect. Edit it in so many ways. My family likes it with graham crackers instead of vanilla wafers. Fresh whipped cream when served instead of meringue. No matter how you make it. It is a solid recipe.
