Ingredients

  1. 1 2/3 cups all-purpose flour
  2. 1 teaspoon baking soda
  3. 1/4 teaspoon ground cinnamon
  4. 1/2 teaspoon salt
  5. 1 cup plus 2 tablespoons sugar
  6. 2 eggs
  7. 1/2 cup oil
  8. 3 1/2 bananas, very ripe, mashed
  9. 2 tablespoons creme fraiche or sour cream
  10. 1 teaspoon vanilla extract
  11. 2/3 cup walnuts, toasted and chopped

Instructions

  1. Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
  2. Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, creme fraiche, and vanilla. Fold in dry ingredients and nuts. Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.

EXCELLENT RECIPE!! I add babana extract to bump up the Nana flavor even more. As another recommended, I too use coconut oil instead of regular. This To me brings this recipe a solid 10!

Save this recipe! Honestly delicious. I’ve made it three times and it comes out perfect every time. I substituted coconut sugar for white sugar and it added a wonderful brown sugar flavor. (If using coconut sugar, decrease the bake time 5-10 minutes. )

This is the best! I replaced oil with coconut oil, it’s all I had. Replaced sour cream with 5% fat yogurt. I will definitely make this again.
