Sunny’s Secret Banana Walnut Bread

Ingredients

  1. 3 bananas, thinly sliced
  2. 3/4 cup granulated sugar
  3. 3 tablespoons Worcestershire sauce
  4. 2 tablespoons vegetable oil
  5. 2 tablespoons light brown sugar
  6. 2 large eggs, beaten
  7. 2 tablespoons salted butter, softened, for buttering the pan
  8. 1 1/2 cups plus 2 tablespoons all-purpose flour
  9. 1 cup roughly chopped walnuts
  10. 1 1/2 teaspoons baking powder
  11. 1/4 teaspoon ground cinnamon

Instructions

  1. Stir together the bananas, granulated sugar, Worcestershire sauce, oil, brown sugar and eggs in a medium bowl. Let rest at room temperature 30 minutes.
  2. Meanwhile, preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-by-5-inch loaf pan and dust with 2 tablespoons flour.
  3. Whisk together the walnuts, baking powder, cinnamon and remaining 1 1/2 cups flour in a large bowl and toss to coat the walnuts. Add the wet ingredients to the dry ingredients and stir to combine.
  4. Pour the batter into the prepared loaf pan and bake until the top is golden and a toothpick inserted in the center comes out clean, 50 minutes to 1 hour. Let cool a bit before removing from pan, slicing and serving.

I cannot believe the texture and taste of this Banana Bread !! It is the best I have made, and the texture is so fine. The Worcestershire Sauce must be the salt replacement. What a neat treat – all you have to do is wait what’s left of the 30 minutes after setting up the pan and dry ingredients. I’ll keep this recipe and share it with family.

Excellent recipe!!! Great fun during shelter-in-place! I am not a fan of banana bread because I do not like the taste of ripe bananas…but this recipe takes banana bread to a new level!!! Make sure not to skip the 30 minute set time of the wet ingredients…I think this is where the magic happens. The end result was a moist, not overly banana tasting, and an awesome balance of sweet and salty. NO hint of Worcestershire sauce at all. One change; I had to use the reduced sodium Worcestershire sauce because that was all I had. I will definitely be making this recipe again!

I made this banana bread exactly has as written. I could not taste the WS Could smell it. Mine did not rise Sunny’s was twice the size as mine I did everything the recipe said. Any suggestions it taste pretty good

Very interesting – I’m always looking for improved/better recipes… First, I made it exact to recipe (I can’t stand it when people give a review of a recipe when they don’t actually make the recipe). I could not taste the Worcestershire, but could definitely smell it – it was a little offputting. It was definitely most, and I think the WS made it taste a bit too salty. If I try it again, I would cut back on the WS, increase the cinnamon, and maybe add some Mexican vanilla.

This is an awesome banana bread recipe! Don’t be afraid of the Worcestershire sauce. It enhances the entire flavors. I was not disappointed!

I may make it again and leave the Worcestershire sauce out and add a little more sugar as I loved the texture and moistness. Don’t know the purpose of the WS. Unusual mixing method and slicing bananas instead of mashing. I could taste the WS slightly but didn’t care much for it.
