Tres Leches Cupcakes

Ingredients

  1. 2 1/2 cups cake flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. 1 teaspoon fine salt
  5. 1 stick unsalted butter, at room temperature
  6. 1 1/2 cups granulated sugar
  7. 3 large eggs
  8. 1 teaspoon vanilla extract
  9. 1 1/4 cup milk
  10. Tres Leches Mix, recipe follows
  11. Whipped Cream Mascarpone Frosting, recipe follows
  12. One 12-ounce can evaporated milk
  13. Half 14-ounce can sweetened condensed milk
  14. 3/4 cup heavy cream
  15. 4 cups heavy cream
  16. 1 teaspoon vanilla extract
  17. 3/4 cup confectioners’ sugar
  18. 4 ounces mascarpone cheese

Instructions

  1. Preheat the oven to 350 degrees F. Line cupcake tins with paper liners. 
  2. Sift together the flour, baking powder, baking soda and salt. 
  3. Cream the butter and granulated sugar with an electric mixer until fluffy and light. Add the eggs, one at a time beating well between each addition. Then add the vanilla and mix until fluffy. Fold in the flour mixture, alternating with the milk. Do not over mix. Portion into the prepared cupcake tins. Bake for about 20 minutes. 
  4. Once the cupcakes have cooled, about 30 minutes, you can inject the cake with about 2 ounces of the Tres Leches Mix. If you do not have an injector, then fork the cupcake gently on the top, and then spoon the tres leches over top so as to not break up the cake. Let sit in the fridge for at least an hour. 
  5. Top each cupcake with some of the Whipped Cream Mascarpone Frosting.
  6. Combine the three milks in a blender until well combined, and then chill in the refrigerator for at least 1 hour.
  7. Chill a metal bowl. Add the heavy cream, vanilla extract and confectioners’ sugar. Start to beat the heavy cream until you see the liquid thicken, and continue to beat until stiff peaks form. Mix in the mascarpone cheese and blend to combine.

These are absolutely delicious! I shared them with a friend of Latino descent and she was in heaven! I did have some frosting left over but used it later in the week. I will definitely make these again and my friend wants me to try the flan cupcakes, too!

This is an amazing recipe! If you follow the recipe step by step, not misread (like the other reviewers) and understand that cake batter can be easily sabotaged by over mixing the batter like the recipe warns about. If you are used to cooking moist cakes or rum cakes then this recipe will be easy!!

I usually make a good tres leches cake, but i was in a hurry.  I tried this and i cheated with boxed yellow cake mix and made half the recipe as directed.   It was actually really good (and im not easily impressed).  Ill use this again for sure

About 10 minutes into baking, the middles exploded out of the cakes. I was able to salvage them by cutting away the parts that jumped over the sides, but they didn’t look pretty.  I used an injector for the milk, but the distribution inside each cupcake was varied. Would probably just pour over the top next time.  And this recipe makes WAYYYY TOO MUCH frosting! You can’t even taste the mascarpone because it’s so minimal compared to the amount of cream.  They did taste delicious, though!

Wow! Thanks for sharing one of the best voted cupcakes in NY…I normally “hate” using cake flour for anything it usually turn out heavy…I just made the vanilla cupcake itself. And they look like the cupcakes on your show and were light as a feather… I’m a new cake designer always looking for a new recipe to try..thanks a bunch….
