Tequila Bars

Ingredients

  1. 1 12-ounce box vanilla wafers
  2. 1/2 cup pine nuts
  3. 3/4 cup unsalted butter (1 1/2 sticks), melted
  4. 1/3 cup tequila
  5. 1/2 cup fresh lime juice
  6. 5 large egg yolks, plus 2 egg whites
  7. 1 14-ounce can sweetened condensed milk
  8. 1 tablespoon sugar

Instructions

  1. Preheat the oven to 350 degrees. Pulse the wafers and pine nuts in a food processor until well ground up. Add the butter and blend until evenly mixed. Set aside 1/4 cup of crumbs. Press the remaining crumb mixture evenly into a 9-by-13 shallow baking pan; bake until golden brown, 15 to 18 minutes. Cool.
  2. In a medium bowl, thoroughly whisk together the tequila, lime juice, egg yolks and condensed milk.
  3. In another medium bowl, beat the egg whites and sugar with an electric mixer until they hold soft peaks. Gently fold the egg whites into the tequila mixture. Spread the filling evenly over the crust and bake for 25 minutes; cool. Sprinkle the reserved crumbs on top. Chill in the fridge for 2 hours or overnight before cutting into bars.

I am not a baker; makes me nervous. I’m usually the hostess so I like to have stuff that other people will enjoy. Not really a big fan of “eggy stuff” but I saw these and thought they would be the perfect dish for a super bowl party. I didn’t start on it until after church super bowl Sunday; I only had 5 hours to get this done. I didn’t put them in the fridge until 3:30. I took them out and cut into bars at 5:45. People said they could smell the liquor. They said they were good and strong (of course I had put an extra shot or two in. I thought they were pretty good. I put the left overs in the fridge. Next day while working from home I decide to break off a piece of one just b/c I wanted something sweet. Man those things are great! I will definitely make them again! Mom (1st grade teacher’s aide said she took hers to work. Said she and teacher would eat them when the kids started getting on their nerves (end of the day.

Used 100% Agave Anejo Tequila. Also sprayed the dish with oil before cooking the crust. Used fresh squeezed lime juice. Otherwise followed all instructions. The bars came out great.

I made these for a Super Bowl party. They were great. Everyone seemed to enjoy them. I did not spray my pan, however I had no trouble releasing them once they were cut. My crust was a little thick, and I might reduce the wafers just a tad, but the pine nuts were an excellent addition. I would definitely make these again.

I loved these things. Made it as an experiment and ended up just leaving a spoon in the tray and eating it out of the fridge for the next couple of days. I thought the quantity of nilla waffers was on the money. I would highly recoment spraying down the pan prior to setting the crust though, seems kind of tricky to get it out….

I made this recipe for a SuperBowl party and it was gone before the 2nd half! I didn’t add as much Nilla Wafers to the bottom because the crust would have been too thick. Overall, this is a great recipe!

I made these for christmas and they were sooo good!! People were a bit worried about the 1/3 cup tequila (as if they were going to get drunk off a little bar!) but you don’t even taste it! Next time I make them I will probably put foil or parchment paper underneath them to make it easier to take out because it was so hard to cut the bars from the pan without it looking messy.

I made the crust without the pine nuts, and it turned out just as good.

I made these for my fiance’s family, who are in love with their Grandmother’s Lemon Squares, so I was hoping these would please. They loved lime taste of the bars! Now they will be from now on known as Amber’s Margarita Bars!

I made the recipe exactly as written from the magazine which had the 1/3 cup of tequila listed.

If you like lime, you will love these bars. They have that wonderful tartness with the sweetness of the vanilla wafers and the sweetened condensed milk.

I used Cuervo Gold which has a mellow flavor. You don’t taste the tequila at all in this recipe. If you use a more flavorful tequila you will taste it more.

This is a wonderful summertime dessert.
