Salted Caramel Banana Macarons

Ingredients

  1. Deselect All
  2. 1 1/4 cup almond meal
  3. 1 3/4 cup powdered sugar
  4. 3 large older egg whites
  5. 3 tablespoons meringue powder
  6. Food coloring, if desired
  7. Fleur de sel, for sprinkling
  8. 1/2 cup granulated sugar
  9. 3/4 tablespoon unsalted butter, at room temperature
  10. 3 teaspoons heavy cream
  11. 3/4 teaspoon fleur de sel
  12. 1 ripe banan
  13. Deep purple macaroons filled with store-bought black currant preserves
  14. Deep pink macaroons filled with store-bought or homemade raspberry preserves
  15. Brown macaroons filled with store-bought peanut butter and jelly
  16. Yellow macaroons filled with store-bought lemon curd
  17. Green macaroons filled with store-bought cream cheese frosting mixed with ground pistachios

Instructions

  1. Cook’s Notes: You don’t need to go out and purchase older egg whites, you can simply used the eggs that you’ve had in the refrigerator for the last 4 or 5 days. After you separate the eggs, make sure you allow the egg whites to come to room temperature before whipping. Room temperature egg whites whip better and faster if at room temperature.
  2. For the meringue cookies: Preheat the oven to 300 degrees F. Prep 2 half sheet pans with parchment or silicone baking mats.
  3. Sift together your almond meal and powdered sugar and set aside.
  4. In the bowl of a standing mixer, or with an electric hand mixer, beat the egg whites on low speed until foamy. Begin sprinkling in the meringue powder as you beat. Then increase the speed to medium and beat until soft peaks form. If adding food coloring at the point, you can divide the meringue, add to a separate bowl and dye as desired (see Cook’s Note, below). Beat to combine. When you get to soft peaks (the peaks will curl when the whisk is lifted from the mixture), carefully proceed; you want firm glossy peaks in your meringue, you do not want to beat all the way to stiff peaks (peaks stand up straight when a whisk is lifted from the mixture).
  5. Add a third of the almond mixture, folding it in gently. Once combined, add the remaining almond flour in 2 batches. Be very, very gentle! Make sure to fully incorporate all your ingredients, but do not over-fold.
  6. Spoon the mixture into a pastry bag fitted with a plain 1/2-inch tip. (You can also use a ziptop bag with a corner cut off.) It’s way easier to fill your bag if you stand it up in a tall glass and fold the top down before spooning in the batter.
  7. Pipe 1-inch mounds of batter onto the prepared sheet pans. Using a wet fingertip, tap the mounds to a smooth tip. Alternately, pick up the pan with both hands, and holding it level, tap it firmly onto the counter several times. Allow any residual water to dry out. Sprinkle each cookie with fleur de sel. Allow the cookies to rest 30 to 60 minutes, depending on the humidity.
  8. Bake the cookies for about 15 minutes, 1 sheet at a time. Let the cookies cool.
  9. For the filling: In a heavy bottomed saucepan set over medium-high heat, combine the sugar and 2 tablespoons water. Slowly let the sugar melt and turn into caramel (do not stir). Carefully add the butter and heavy cream and stand back as it will release a lot of steam. Stir until everything is fully incorporated. Add the fleur de sel.
  10. In a small bowl, mash the ripe banana with a fork. Once the caramel has cooled, add it to the mashed banana. Spread the mixture on the cookies, making sandwiches. Place in the refrigerator and allow to mature for at least 24 hours.

Can we get a video of this recipe? This is the only macaron recipe that uses meringue powder so it would help to see how it should come together.

Am wondering if maybe the recipe was typed wrong? Am I positively supposed to use 3 TABLESPOONS cream of tartar or is it supposed to be 3 TEASPOONS? Please respond quickly, I am making them right now. Thank you!

Thank you for this recipe! It has finally given me macarons with their cute little feet! My fiance said ‘these are just like the bakery ones!” I did not try the filling as I used another recipe. I had some cracking but I am thinking that is because of my oven as it was the same row each time. Now time to play with colors and flavors!

My daughter and I made these and, I have to say, we were a little intimidated at first because we’ve heard how hard they are to make but these came out great! They had a ‘foot’ and did not crack and they were nice and chewy. Our caramel/banana filling was a little thin but still delicious. We are going to try some of the suggestions for different fillings next time.

I’m addicted. First time I tinted them lavendar then made filling with cremecheese icing and added a little creme de cassis and rasp jelly (thought I had blackcurrant.. and they were a hit! Second time I substituted hazelnut meal for almonds and added 1.5 tsp cocoa and filled with nutella.. Amazing.

I now have a banana that has gone south so I’m gonna try the original. BTW I had eggwhite powder and thought it was the same as meringue powder and it worked fine.

I was not impressed with the caramel banana filling…actually it was disappointing and straight gross…so we tossed it and ended up filling them with orange marmalade that I had in the pantry. They ended up savable. But even the cookie part did not come out like expected. I was really really hoping for better!

I’ve made a lot of Macarons that require measuring grams carefully on a kitchen scale. I wanted to try this recipe and see if it measured up to the others. They came out perfectly with pretty “feet!” I certainly will be making them again. I even posted the recipe and pictures on my blog: Get Off Your Butt and BAKE!
