Ingredients
- Nonstick baking spray
- Four 1-ounce squares unsweetened chocolate
- 2 sticks butter
- 2 cups granulated sugar
- 4 large eggs
- 3 teaspoons pure vanilla extract
- 1 1/4 cups all-purpose flour
- 2 sticks butter, softened
- 5 cups powdered sugar
- 1/4 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 to 3/4 cup brewed coffee, cooled to room temperature
Instructions
- Preheat the oven to 325 degrees F. Spray an 8-inch square baking pan with nonstick baking spray.
- For the brownie batter: Place the chocolate in a microwave-safe bowl. Melt the chocolate in the microwave in 30-second increments, being careful not to let it burn. Set it aside to cool slightly.
- In a medium mixing bowl, cream the butter and granulated sugar. Beat in the eggs. With the mixer on low speed, drizzle in the melted chocolate. Add the vanilla extract and mix. Add the flour to the bowl and mix just until combined; do not over mix.
- Pour the batter in the prepared baking pan. Spread it to even out the surface. Bake until the center is no longer soft, 40 to 45 minutes. Set the brownies aside to cool completely before icing.
- For the icing: In a large mixing bowl, combine the butter, powdered sugar, cocoa powder, salt and vanilla. Mix until slightly combined, then add 1/2 cup of the coffee. Whip until the icing is light and fluffy. If the icing is overly thick, add 1/4 cup more coffee. It should be very light and fluffy.
- Ice the cooled brownies, spreading the icing on thick. Refrigerate until the icing is firm, and then slice the brownies into squares.

AMAZING!! Definetely not for the camp of people who dislike an equal ratio of icing, but thankfully I am not one of them haha. Another great recipe ree ❤
The brownie part was good. The icing was way too much. Look at the picture. Half icing, half brownie. Will not make again unless I use 1/4 of the icing recipe.
These brownies are awesome! I’ve made them several times and they always come out perfect! Thanks Ree for sharing.
Love this recipe! Just the right amount of coffee and chocolate! @thtbmcr57 I definitely don’t think the good reviews are payed people or Rees friends. I have a feeling because I messed up the first time I made them and think others might have too. I redid the recipe following along with the video the entire time and , delicious.
I haven’t made the brownies, but use boxed brownies and put this delicious frosting on top. Everyone loves them and wants the recipe!
I haven’t made the brownies, but I make mocha cupcakes and put this absolutely delicious frosting on them. Nothing better!
Some people who didn’t care for this recipe sound as if they’re still in junior high. My word. I like it, although the amount of coffee is too much; I would begin by adding 1/4 cup and going from there. Other than that, this is a winner – and yes, I followed it to the letter and made it in an 8″ square pan and baked ’em for exactly 45 minutes at 325F in a gas oven.
These are the best cake brownies EVER!!!!
I don’t know why this recipe has bad reviews! This is my go to brownie recipe! My family LOVES these cake like brownies and we store them in the refrigerator, because I love the consistency of the frosting. . Love them cold!

I love this recipe and I love Ree! The frosting is decadent and delicious. Ree is definitely a resource you can rely on.

HORRIBLE!
After 2 trips to the store for ingredients (this recipe left out Vanilla Extract in the frosting. I had enough for the brownies, but not the frosting), a lot of work and expense — I cooked the brownies. It took much longer than the recipe said and they didn’t get done on the inside. The 1/2 c of coffee was way too much. There was too much frosting, so a lot was thrown away. My family, dinner guests and I hated them! They were Thrown Away. No dessert. HORRIBLE!
