Ingredients

  1. 3 egg whites, at room temperature
  2. 1/4 teaspoon cream of tartar
  3. 3/4 cup sugar
  4. 1 teaspoon imitation strawberry extract
  5. 3 drops red food coloring

Instructions

  1. Preheat oven to 200 degrees F.
  2. Line 2 heavy large baking sheets with parchment paper. Beat egg whites in clean large metal bowl on medium speed until foamy. Add cream of tartar. Increase speed to high and continue beating until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until siff peaks form, about 5 minutes. Quickly mix in strawberry extract. Stir in food coloring, 1 drop at a time, until desired color is achieved.
  3. Spoon meringue into pastry bag fitted with star tip. Pipe 12 (1 1/2-inch high by 1 1/2 -inch in diameter) mounds onto each prepared baking sheet, spacing evenly apart. Bake for 3 hours, or until dry and crisp. Cool meringues completely on baking sheets. Store in an airtight container at room temperature.

I likewise had trouble finding strawberry extract(I have since found rasberrybut I did substitute vanilla at the time. I still added the food coloring because I wanted my cookies pink. I did a taste test after 2 hours and declared them done! They were super yummy without being overly sweet and I enjoyed them more the next day, they got softer on the inside while still keeping the crisp outside!

Made a batch following the recipe exactly, and another substituting lemon for strawberry extract (and yellow for red food coloring). They were really easy to make (I have a stand mixer so it was really quick!) and everyone at the birthday party I took them to loved them, especially the kids. Thanks for the great recipe Sandra!

Where do you find STRAWBERRY EXTRACT at ? I went to several stores as well and found lemon and orange but no strawberry. And I sure don’t live in Ohio either lol

My 10 year old daughter and friend made these (with a little help from Mom:) They came out great, just make sure you follow receipe and you do really have to beat the eggs for 5-7 minutes. Make sure you use a stainless steel bowl! They will not work with a plastic bowl, found that out the hard way!
