Lemon Chess Pie

Ingredients

  1. 2 cups sugar
  2. 1 tablespoon flour
  3. 1 tablespoon fine yellow cornmeal
  4. 4 eggs
  5. 1/4 cup milk
  6. 1/4 cup unsalted butter, melted
  7. 2 tablespoons grated lemon rind
  8. 1/3 cup fresh lemon juice with pulp
  9. One 9-inch unbaked pie shell
  10. 1 cup heavy cream, whipped

Instructions

  1. In a large bowl combine the sugar, flour and cornmeal. Blend well, then add the eggs and combine well. Add the milk and mix then stir in the melted butter, lemon rind and juice. Pour this filling into the crust and cover then edge of the crust with foil to prevent it from burning, taking care not to touch the filling. Bake at 375 degrees F for 45 minutes, removing the foil after 30 minutes. Cool and serve or refrigerate overnight but let sit out 3 hours before serving to warm up slightly. Serve with dollops of whipped cream.

I prefer a tart lemon chess pie. Next time I will cut back on sugar and add more lemon..
But the recipe filled my unbaked pie crust perfectly..

DON’T ADD ANYTHING to it. I added a cup of fresh blueberries and the pie never set up. I had to throw it all away. That’s not the recipes fault, but just making y’all aware.

Best lemon pie I have ever had. Followed recipe to a “T” be sure to cover the crust like the recipe calls for. I also bought pre made dough and it wasn’t a problem. I am a huge fan of lemons so I am partial. I wish it would cool faster so I can hurry and eat it lol.

This is a tangy pie! The filling is similar to lemon bars. This is different from other chess pies, as there isn’t much cornmeal.

This is such a great pie! I love lemon meringue pie and this is the perfect substitute for when I don’t have as much time. I usually add a splash of vanilla and a touch less sugar than the recipe calls for. My boyfriend is in love with this pie and asks me to make this on a regular basis, and I have been requested to make this for each of the three thanksgiving meals I will be attending this year – so this pie is certainly a crowd pleaser! Definitely give it a try if you are looking for a relatively simple lemon dessert! Turns out great every time.

My Go To Recipe – was looking for an easy tasty lemon pie to make on those days when I did not want to spend time making a Lemon Meringue Pie. Found this recipe about 4 years ago and it is wonderful. Also added to menu at my restaurant and was a big hit! I cut sugar to 1-1/2 cups and add an extra tablespoon of flour for a total of 2 tablespoons. I omit covering edges of crust with foil; I loosely cover complete pie with foil after about 25-30 minutes bake time to prevent over browning of top as well as the crust.
