Ingredients

  1. 1 cup sugar
  2. 1/2 stick melted butter
  3. 2 tablespoons flour
  4. 3 eggs, beaten
  5. 1 teaspoon vanilla
  6. 1 cup buttermilk
  7. 1 cup coconut, grated
  8. 1 9-inch pie crust, fluted and unbaked

Instructions

  1. Mix all the ingredients together. Pour into pie crust and bake in a preheated 300 degree oven for one hour. Cool before serving

This is absolutely the best recipe ever for coconut pie! I usually decrease the cup of sugar to 3/4th cup. Even if you do not have buttermilk at home, most cook books will tell you how to substitute.

Using buttermilk in the pie filling is an inspired idea! Instead of the mushy pudding-like consistency, this recipe produces a firmer, denser tastier pie that seems less sickeninly sweet. The fresh coconut flavor really shines. My guests raved over it. I used a fresh cocnut pie shell. Because of the low temperature used to bake the filling, I prebaked the pie shell.
