Farmhouse Lemon Bars

Ingredients

  1. 2 cups all-purpose flour
  2. 2 sticks unsalted butter, softened, plus more for greasing the baking dish
  3. 1/2 cup sugar
  4. 1 teaspoon salt
  5. 3 large eggs
  6. Zest of 1 lemon
  7. Juice of 1 1/2 lemons (about 3 tablespoons)
  8. 3 tablespoons all-purpose flour
  9. 1/3 cup sugar
  10. 1/2 teaspoon salt
  11. 1/2 cup confectioner’s sugar, for dusting

Instructions

  1. Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish with butter.
  2. For the crust: Combine the flour, butter, sugar and salt in the bowl of a food processor; pulse to combine. Pat the crust into the prepared baking dish, leaving a small lip around the edge to hold the filling. Place in the oven and bake until slightly golden, 10 minutes.
  3. For the filling: In a small bowl, combine the eggs, lemon zest, lemon juice, flour, sugar and salt; whisk together, then pour over the crust. Bake until the filling is firm and the crust is golden brown, 20 minutes.
  4. Let cool for 30 minutes, then chill in the refrigerator until the filling is firm and has set, 1 hour.
  5. Remove the lemon bars from baking dish and dust with confectioner’s sugar. Cut into 16 squares. Arrange on a platter and serve.

There was way to much crust so I didn’t use all of it. Other than that it was pretty good

What a disappointment. The crust is way too thick for an 8×8 pan, but I guess that is a personal decision. This should be called custard bars as they do not taste like lemon. I think this would be better in a larger pan with triple the lemon. Also, FN the written recipe and the video aren’t the same. Doesn’t someone review this stuff? Disappointing.

This makes too much crust.  The filling is not lemony enough or sweet enough.  I would never make these again.  Very disappointing

Huge fan of the show!! I made the 2 cups of flour recipe for the crust and it was way too much.  I threw out half and it was a better ratio for the amount of filling with less crust.  Needs a little more lemon though in my opinion and a tinge more sugar, but I like it super lemony.  Thanks Nancy!
