Double Ginger Cookies

Ingredients

  1. 2 1/4 cups all-purpose flour
  2. 1 packed cup dark brown sugar
  3. 1 tablespoon ground ginger
  4. 1 teaspoon baking soda
  5. 1/2 teaspoon ground allspice
  6. 1/2 teaspoon ground cinnamon
  7. 1 teaspoon fine salt
  8. 1/2 cup coarsely chopped candied ginger (about 2 1/2 ounces)
  9. 1/4 cup raisins
  10. 3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled slightly
  11. 1/3 cup molasses
  12. 1 egg, at room temperature

Instructions

  1. Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper or silicon baking mats.
  2. In a medium bowl, mix together the flour, sugar, ginger, baking soda, allspice, cinnamon and salt. Stir in the candied ginger and raisins. Set aside.
  3. In a large bowl, beat together the melted butter, molasses and egg. Gradually stir the flour mixture into the molasses mixture.
  4. Drop a heaped tablespoon of dough per cookie onto the prepared baking sheets, placing each about 1 inch apart.
  5. Bake for 7 to 9 minutes. Allow the cookies to cool on the baking sheet for 10 minutes until they have set. Transfer to a wire rack and cool completely. Store in an airtight container.

I normally don’t really like gingerbread or any ginger-flavored cookies,  so I was skeptical. These cookies don’t have such strong gingery flavor. Very chewy and buttery. They are good!

Wonderful cookies! They reminded me of my childhood Christmas celebrations. Just started baking and these are an inspiration to continue. I halved the brown sugar and omitted the candied ginger and raisins for my health. I added some grated fresh ginger and the cookies have a perfect snap and great spice flavor!

Oh my!  These little cookies taste amazingly delicious!  They are addictive!  I love the little touch of heat from the ginger and the perfect balance of salty and sweet.  It took me a while to find the candied ginger (called “crystallized ginger” in the spice section).  The only negative I can find about these cookies is the price of the crystallized ginger.  It cost $10 for not even a full half cup.  Next time I may leave it out and substitute more raisins.  Anyway, I will definitely make these again.
