Ingredients

  1. Nonstick cooking spray
  2. 3/4 cup all-purpose flour
  3. 1/3 cup cocoa powder
  4. 1 teaspoon baking powder
  5. 1/4 teaspoon baking soda
  6. 1/8 teaspoon kosher salt
  7. 1/2 cup coconut oil, at room temperature
  8. 1/2 cup granulated sugar
  9. 1 large egg
  10. 1/2 teaspoon vanilla extract
  11. 3/4 cup whole milk
  12. 1/3 cup milk chocolate chips
  13. 3/4 cup walnuts, chopped
  14. Confectioners’ sugar for dusting

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 24-cup mini-muffin tin with cooking spray.
  2. Whisk together the flour, cocoa, baking powder, baking soda and salt in a medium bowl.
  3. Whisk together the coconut oil and granulated sugar in a large bowl until well combined. Add the egg and vanilla extract and whisk until well mixed. Whisk in the milk, then add the flour mixture and whisk until just incorporated. Stir in the chocolate chips and walnuts.
  4. Divide the batter evenly among the muffin cups. Bake until a wooden toothpick inserted into the center of the scuffins comes out clean, about 15 minutes. Cool in the tin on a cooling rack for 5 minutes and then remove from the tin and let cool completely. Dust with confectioners’ sugar before serving.

These are heavenly! I have made them so many times, I know the recipe by heart. My family loved them and so do people at work. If you love chocolate, you will love these. They are easy and come out perfect every time.I use mini semi sweet chocolate chips and some chopped pecans.

The results for this scuffin were disappointing. They were not puffy and very dense and they had a weird texture. Also they could’ve been sweeter. I would not make these again.

Made these after watching the Valentine’s Day episode on FN…I really didn’t care for the flavor of coconut oil in these which was surprisingly strong after baking.  Nice sweetness (not too sweet and adding the chocolate chips makes it perfect) but won’t make these again.

“Scuffins?”  Who are you kidding?  These are chocolate cake poured into mini muffin tins!  Delicious, but don’t kid yourself…they are dessert.  Plenty of sugar and fat.  I substituted unhealthy coconut oil with healthy canola oil and used Dutch process cocoa.  IMO, no need for either chocolate chips, walnuts or confectioners sugar for dusting.
