Baked Ham with Brown Sugar Honey Glaze

Ingredients

  1. 18 to 20-pound smoked ham, water added, ham hock removed
  2. One 16-ounce box light brown sugar
  3. 1 cup (8-ounce jar) clover honey

Instructions

  1. Adjust the oven racks to accommodate a large covered roasting pan. Fit the pan with a shallow rack. Preheat the oven to 350 degrees F. 
  2. Unwrap the ham and rinse it in cold water. Place it on the rack in the roasting pan. Cover the pan with the lid and bake for half the estimated cooking time (Total cooking time is about 20 minutes per pound.) Halfway through the estimated cooking time, add the sugar and honey to a saucepan, cooking over medium heat until smooth and sugar is dissolved. Pour the mixture over the ham and continue baking the ham, basting occasionally with the drippings in the roaster. 
  3. Check for doneness at the end of the estimated cooking time by inserting a meat thermometer at a meaty point (not into fat or touching the bone). It should register 160 degrees F. 
  4. Allow the ham to stand for 15 minutes before slicing to allow the juices to set.

Well, I hadn’t used this recipe for ham before and I’m afraid I won’t use it again.  I don’t know if it was the ham (whole 13.78 lb. and I adjusted the time for the weight) or the honey but, it had a different flavor.  The crust on the outside of the ham was so hard we had to pull it off because you couldn’t get a knife through it.  I even reduced the heat after the first 2 1/2 hours of cooking.  Now, I’ve been soaking the pan for over 15 hours and still cannot get the gunk off the bottom….and I sprayed it before.  Sorry to give such a poor review.  I’m a seasoned cook and retired restaurant manager so, I don’t think it was me.  Perhaps I’ll leave the honey to chicken and stick with fruit and sugar for hams.

So delicious! I bought  a ham at Target for $18.00 and with this recipe it rivaled the Honey Baked ham which sells for $55-60 for the same size. I also halved the recipe and it came out perfectly.

I just made this recipe. My ham was only a little over 9 lb so I cat the recipe in half. It worked perfectly. The glaze on the ham was a perfect amount and there was lots of drippings for dipping. I like mine a little sweeter than my husband. When I got ready to add the sauce I cut some slits in my ham so the sauce would get in it. Loved it!!
