Spanish Baked Salmon

Ingredients

  1. 2 cups sourdough bread croutons (1-inch dice)
  2. 3/4 cup pitted green olives
  3. 3 red onions, cut into wedges
  4. 3 red bell peppers, seeded and cut into 6 slices each
  5. 1/2 teaspoon smoked paprika
  6. Sprinkle of kosher salt
  7. Sprinkle of freshly ground black pepper
  8. 5 tablespoons olive oil
  9. Six 6-ounce fillets skinless salmon
  10. 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Put the croutons, olives, onions and peppers on a baking sheet. Add the smoked paprika, salt, pepper and 3 tablespoons of the olive oil and toss until everything is evenly coated. Bake for 15 minutes.
  3. Rub the salmon with the remaining 2 tablespoons olive oil and arrange it among the vegetables and croutons on the baking sheet. Bake until the salmon is cooked, another 10 to 12 minutes.
  4. Garnish with the parsley and serve.

This is awesome and easy.   (I forgot to add the olives).   You can use any vegetables you have on hand to roast.   The key is the bread croutons.   I love oven roasted vegetables.   Have them all the time, but never thought to add bread croutons.     Then to throw salmon on top and finish roasting.   It just couldn’t be simpler.  And great.

Delicious!  Used Castelvetrano olives and they were wonderful. The salmon needed more seasoning, maybe lemon and some dill, but otherwise a winner!

Tried this recipe and the fish came out dry. I added olive kk and lemon when serving because it really needed a sauce. The olives added a really great saltiness with the fish that was very much needed. Also wouldn’t put so many onions in and cook the bell peppers a little longer before adding the fish. I’ll probably try this again while cooking the salmon for a shorter amount of time and adding more olive oil.

Delicious!  I added a few more seasonings, and black kalamata olives, and left everything else the same.  Really delicious, and flavorful, with crunchy croutons. Veggies went in first for about 20 min, and salmon only 12 min, as I like it medium and not dry.  My husband loved it, and insisted on a picture first!  Restaurant quality, it will become a staple in our home.

Delicious! I added lemon slices, butter and smoked paprika to the salmon because we like a lot of flavor. Also the pitted green olives I used were marinated. My husband and my 2 year old loved it!

Excellent!!!! This recipe has all the elements. Easy to prepare, taste was so good, easy clean up everything I like and need in my recipe box. Followed the recipe exactly except halved it because there is only three of us and it came out perfect. My husband was outside working and the windows in the kitchen were open and the smell brought him in the house and when my son came in from school he was like dinner smells good. I am a big fan of my food smelling as good as it tastes. And this did. Thanks Ree for another great recipe.
