Baked Snapper with Vegetables

Ingredients

  1. 1 tablespoon olive oil
  2. 2 fillets red snapper or other firm fish
  3. 1/2 cup thinly sliced leeks
  4. 1/2 cup thinly sliced red pepper
  5. Salt and pepper
  6. White wine

Instructions

  1. Preheat oven to 375 degrees. On a large piece of foil, drizzle olive oil and top with fish fillets. Top with leeks and red pepper. Season with dried tarragon, salt and pepper. Splash fish with 3-4 tablespoons wine. Fold foil up into a package and place on baking sheet. Bake for 20 minutes

This is a simple, tried-and-true kind of recipe that still works, especially for busy cooks. The dish took approximately 7 minutes of prep time, went into the oven, and came out perfect 20 minutes later. It’s surprising how much flavor it has with such a bare minimum of ingredients.
