Ingredients
- 1 tablespoon olive oil
- 2 fillets red snapper or other firm fish
- 1/2 cup thinly sliced leeks
- 1/2 cup thinly sliced red pepper
- Salt and pepper
- White wine
Instructions
- Preheat oven to 375 degrees. On a large piece of foil, drizzle olive oil and top with fish fillets. Top with leeks and red pepper. Season with dried tarragon, salt and pepper. Splash fish with 3-4 tablespoons wine. Fold foil up into a package and place on baking sheet. Bake for 20 minutes

This was insanely easy to make, and so delicious! I’m a beginner cook, and I loved serving my husband such a simple and beautiful dish. The flavor was very good, and I might experiment with different seasonings and vegetables next time I make it.
This is a simple, tried-and-true kind of recipe that still works, especially for busy cooks. The dish took approximately 7 minutes of prep time, went into the oven, and came out perfect 20 minutes later. It’s surprising how much flavor it has with such a bare minimum of ingredients. I can’t wait to try some variations, using different vegetables, different seasonings. Good stuff!
